Il existe désormais des souches de blé qui ne produisent pas les formes de gluten qui déclenchent des réactions immunitaires dangereuses chez certaines personnes (la prévalente est d’environ 1 personne sur 100). Mais ces nouvelles souches contiennent toujours d’autres formes de gluten et on peut les utiliser pour créer du pain. Mais malgré cette présence, ce blé est bien meilleur que tous les produits “sans gluten” qu’on trouve sur les étagères.
