LE MONDE ECONOMIE | | Par Cécile Boutelet (Berlin, correspondance) L’Allemagne est aujourd’hui le troisième exportateur de produits alimentaires du monde. Selon les chiffres publiés par le syndicat allemand des industries alimentaires (BVE), l’Allemagne a exporté, l’an dernier, 54,4 milliards d’euros de produits alimentaires, soit 32 % de sa production totale. La part du lion revient à la viande, qui représente 19,5 % des exportations, dont 84,5 % sont écoulés vers les pays de l’Union européenne, notamment la France et les Pays-Bas. Les conditions pour toutes les entreprises d’abattage de porc ont été extrêmement difficiles. Malgré l’augmentation des abattages, elles enregistrent un recul de leur CA. Au total, les industries de la viande allemandes ont réalisé en 2015 un CA de 18,3 milliards EUR, soit une petite progression de 0,7% par rapport à 2014. Le nombre d’entreprises est resté stable (à 384) alors que le nombre d’employés a légèrement augmenté, s’élevant à 58 930 personnes. La consommation de viande a chuté en Allemagne en passant de 60,9 kg/habitant en 2014 à 59,9 kg/habitant en 2015, et notamment celle de la viande porcine en baisse de 1,2 kg/habitant avec 37,3 kg en 2015. En ce qui concerne la viande bovine, la production a reculé de 1,5% pour les abattages (3,5 millions de têtes) et de 0,9% pour la production (1,1 million de tonnes). Source Business France.

It is the duty of the competent authorities to check the marketability of foodstuffs by carrying out regular controls and targeted sampling. Yet consumers can also make an active contribution to food safety. Official food control and inspection In Germany, the responsibility for official food control and inspection rests with the federal states (Länder). There are control programmes on a nationwide scale such as food monitoring, the National Monitoring Plan (BÜP) and the Multiannual National Control Plan (MNKP). In Germany, the responsibility for official food control and inspection lies with the federal states. Food inspection and veterinary offices in urban and rural districts carry out the monitoring programmes drawn up by the relevant state ministries, take samples and carry out regular checks of food business operators. On the federal level, two authorities have coordinating capacities. These two authorities were established in the aftermath of the food scandals in the late 1990s (e.g. BSE) with the objective of making the protection of consumer health more transparent. The BVL was established for the purpose of improving coordination between the federal government and the federal states and improving the communication of risks.

The new call for industry to reduce levels of salt in foods comes on the back of a recent assessment that found the majority of the German population consume too much salt. In a statement, the BfR said that high salt consumption can drive up blood pressure and supports the development of cardiovascular diseases. “In many people, reducing salt intake can lower blood pressure,”it said. “However, what is important is not so much how often we use the salt shaker, but rather the consumption of bread, dairy products (e.g. cheese), meat products and sausages,”warned the agency – who are responsible for preparing expert opinions on food safety for the German Government.

As part of a new publication entitled Essen ohne Pestizide (Food without pesticides), the organisation conducted tests on more than 22,000 samples and found that 80 per cent of all conventionally grown fruit, as well as 55 per cent of vegetables, carried traces of pesticide. The report uses a green-yellow-red traffic light system to provide consumers with guidance on which products to avoid, marking out 76 fruit and vegetables as containing pesticides and recommending the public avoid almost one-third of the items tested. One sample of Turkish table grapes reportedly contained traces of 24 pesticides, Greenpeace noted. Poisonous material.
