A novel antiviral and antimicrobial approach could be based on the use of polyphenols obtained from natural sources. Here, we tested the antibacterial and antiviral effect of a mix of polyphenols present in natural almond skin (NS MIX). The antimicrobial potential was evaluated against the standard American Type Culture Collection (ATCC) and clinical strains of Staphylococcus aureus, including methicillin-resistant (MRSA) strains, by minimum inhibitory concentration (MIC) and minimum bactericidal concentration (MBC). Herpes simplex virus type I was used for the antiviral assessment of NS MIX by plaque assay.

Over the lasts years, polyphenols have shown increasingly interest in Food Science. The intake of polyphenols in our diet is closely related not only to human health but also to food quality, since these compounds are greatly related to organoleptic properties and biological activity. This special issue addressed novel research regarding the importance of polyphenols for food quality from different point of view from their biological activity and their importance in nutrition to their role in the quality and the organoleptic properties of food.

Among the submitted works, five papers have been selected to be part of this special issue. The paper authored by Y. J. Int. J. Mol. Sci. 16/04/19 Considerations for the Use of Polyphenols as Therapies in Neurodegenerative Diseases. Over the last two decades, the increase in the incidence of neurodegenerative diseases due to the increasingly ageing population has resulted in a major social and economic burden.

Among the most studied dietary molecules, polyphenols stand out because of their multiple and often overlapping reported modes of action. However, ambiguity still exists as to the significance of their influence on human health. This review discusses the characteristics and functions of polyphenols that shape their potential therapeutic actions in neurodegenerative diseases while the less-explored gaps in knowledge of these nutrients will also be highlighted.

For a simple question, a simple answer is that they are compounds that have one or more hydroxyl groups attached directly to an aromatic ring. Phenol (Figure 1) is the basic structure, the aromatic ring being benzene. Due to the aromatic ring, the hydrogen of the hydroxyl group is labile, which makes phenols weak acids. A growing body of research indicates that polyphenol consumption may play a vital role in health through the regulation of metabolism, weight, chronic disease, and cell proliferation. Over 8,000 polyphenols have thus far been identified, though their short- and long-term health effects have not been fully characterized (1). However, the presence of this virus has been also demonstrated in further tissues, including sputum, feces, bronchoalveolar fluids, and blood, with different viral kinetics (1–3). Nowadays, no pharmacological treatments have been licensed as effective in terms of both viral titer reduction and/or lowering the virus spread. Polyphenols are the largest class of bioactive compounds present in plants, where are produced as secondary metabolites with protective functions against ultraviolet radiations, pathogen aggression, and oxidative stress protection.

A clear identification of the richest dietary sources of polyphenols is necessary to better understand and exploit the health-promoting effects of polyphenols, a matter of interest for the food industry, food scientists and nutritionists. However, the wide variety of chemical structures among polyphenols makes it difficult to estimate their content in foods, as different methods of analysis must be used to cover the whole range of molecules known to exist in foods. For this reason, global colorimetric assays such as the Folin assay have been used to determine the total polyphenol content in foods (Vinson et al., 1998; Vinson et al., 2001). Folin values should be considered as an estimate of antioxidant content rather than the total polyphenol content, unless applied to a purified polyphenol fraction (Brat et al., 2006). The most reliable method to estimate total polyphenol content is the analysis of all individual phenolic compounds.

Chromatography Research International Volume 2012 (2012), Separation of Polyphenols from Jordanian Olive Oil Mill Wastewater. This research aims at separation of polyphenols from Jordanian olive mill wastewater which have possible applications in pharmaceutical industry. The phenolic compounds were isolated using silica column chromatography based on using different solvents after extracting the acidified solution with n-hexane and ethyl acetate.

The structural elucidation of the separated compounds was achieved using 1H-NMR, 13C-NMR and mass spectrometry. The concentrations of these compounds were determined by GC-MS after derivatization with N, O-bis(trimethylsilyl)trifluoroacetamide (BSTFA). The concentrations of the main isolated phenolic compounds in the Jordanian olive mill wastewater were ferulic acid (93.6 mg/L), trans-cinnamic acid (105.3 mg/L), p-coumaric acid (117.0 mg/L), vanillic acid (128.7 mg/L), caffeic acid (140.4 mg/L), tyrosol (210.6 mg/L), and hydroxytyrosol (315.9 mg/L). 1.
