This was a tough weekend for me. I felt so uninspired with everything – cooking, blogging, working, running… you name it. And on top of everything else, Jason had to work all weekend so I barely got to spend any time with him. Normally I wouldn’t be so upset about it but he’s leaving for San Francisco in 3 weeks and once he’s back up north, I probably won’t be seeing him for another month. Yeah, having a long-distance relationship is pretty damn tough.

But on a good note, these muffins totally got me in my groove again. How can this muffin not brighten up anyone’s day? Cinnamon-sugar topping: YES! And yeah, that pretty much sums it up. So here’s how you make this: Let’s first start with the dry ingredients – flour, sugar, cinnamon, nutmeg, baking powder and salt. Then we’ll combine the wet ingredients – milk, vegetable oil, egg and vanilla. Pop these babies into the oven for about 15 minutes. Notes. Cinnamon Toast Rolls. The USDA released its new food pyramid the other day (which is actually a plate now instead of a pyramid), and I am sorely disappointed to report that cinnamon rolls did not appear anywhere on that plate.

I think by now most of us know what should be on our dinner plate in terms of healthy, well-rounded nutrient-laden meals, but it is my considered opinion that our breakfast plate should include cinnamon rolls now and then. And not just any cinnamon roll, mind you, but how ‘bout a homemade cinnamon roll hybrid that is a cross between a cinnamon roll and cinnamon toast, is super easy to make and gosh darn delicious. In honor of their ancestry, I call these little gems cinnamon toast rolls, and here’s all you need to make them… Yep. That’s it… some soft white bread, some butter and some cinnamon sugar. These are so freakin’ good. I made them for breakfast on Saturday and all 16 disappeared in a flash – like it had never happened. Went to Costco 2 hours later, and whoops! How did that case of crescent roll packages get in my cart? Mini rounds of fluffy dough, filled with butter, cinnamon, brown sugar, and nuts. Bite-sized and ready to devour in under 25 minutes. You may also find yourself making these every single day. I’m just going to sit over here in the corner. Mini Cinnamon Rolls Makes 16 Prep time: 10 minutes Cook time: 12 minutes Ingredients • 1 (8 ounce) tube Pillsbury crescent seamless dough sheet ** • 2 tablespoons butter, melted • 1 teaspoon cinnamon • 4 tablespoons brown sugar • 2 tablespoons finely chopped pecans • 1 teaspoon maple syrup • 1 tablespoon skim milk • 1/2 cup powdered sugar Directions Preheat oven to 350 degrees.

I took them to an early morning tailgate, and it was a great way to enjoy cinnamon rolls without the mess. In the interest of full disclosure, I wasn't entirely happy with how they turned out, but it was all my own error. We were out at an alumni function Friday night, soI didn't start these until after 10pm Friday night; needless to say I was already really really tired... so I'm afraid I was just a little careless. I feel like I should have kneaded it by hand a few times before the first rise, because it was very very slow to rise. I actually stopped it about 45 minutes in, kneaded it a few times, then put it back... and miraculously, it rose! Jen at Beantown Baker said that she had to re-roll each roll before putting it in the muffin tin, and I did too. We got at least 8 inches of snow on Tuesday and I have shoveled their driveway 4 times. I don’t have the slightest idea how to use a snowblower, (literally not a clue) so old school it was. My back and arms are killing me! True statement: snow is heavy. If it weren’t for the nice lady across the street who came to help this helpless girl I may be passed out on the driveway right now. Agh…these muffins.
