Today I’m being a hypocrite. Well, sorta. If you’ve read this blog for, like, five minutes then you know that tomato sauce is not my favorite thing. While I enjoy some Italian food in moderation, it is still easily my least favorite cuisine and most tomato sauces can take a hike… unless it’s a just a small spread on pizza.
I’ve been known to get downright mean when I don’t eat a snack.

A long time ago, my mother made grilled vegetable sandwiches and packed them for lunch when a group of friends and I went on a trip. They were rich vegetarian sandwiches, and time-consuming to make. There were eggplant and peppers and zucchini to roast, and pestos and tapenade to grind or buy.

I've been making this delicious chocolate cake for almost as long as I can remember. I'd love to tell you that Chocolate Obsession Cake is it's original name, but I would be telling a lie............. a BIG lie.............. You see, I made the name up a number of years ago when I was teaching a cooking class revolving around preparing an elegant Valentine Dinner. I mean really, does Texas Sheet Cake ( the real name) sound like a fancy-dancy sophisticated Valentine dessert? It doesn't in my book........ but it is a fabulous cake; rich and decadent, dense yet light ............ and delicious enough to qualify as a gourmet indulgence ...................... so I just gave it a festive new moniker and a bit of a face-lift! As it's true name suggests, this cake can be made in a flash with a large (Texas-style) cookie sheet pan.
As you may gather, I like simple recipes. I especially like simple recipes that take pantry ingredients and transform them into a rich, luscious meal that is worthy of note. This one does that using canned tomatoes, the stalwart of the store cupboard.
Do you know what a Dilly Bar is? It's a classic DQ ice cream treat; a circle of vanilla ice cream covered in chocolate. Looks like this. Well.
