In words and pictures: Candy is Dandy: Cooking Peanut Butter Cups. With Halloween rapidly approaching, candies and chocolates have infiltrated the entire supermarket. I can typically avoid their sultry stares by skipping the single candy-isle and defiantly turning my back to them at checkout. Lately though, they catch my eye near the produce, dairy and grain isles, give me flirty smiles, and whispering sweet nothings.
I walk off in a huff, offended at their ubiquitous cat-calls, but hours later, I drift back to our stolen moments and subtle exchanges, and I find myself wanting candy more than I have all year. Cruel mistress. I decided that I would not succumb to the pre-packaged stuff this year, and instead, make my own delectables from high quality ingredients with full control over the amounts and proportions, and embarked on homemade peanut butter cups. Brown spotted bananas were sitting on our counter, staring me down. I tried to ignore them, but they kept haunting me.
It seems like I can never eat bananas fast enough. They always turn brown and beg me to put them to good use. I usually bake banana bread, banana cookies, banana cake, or use them in a smoothie. This time I decided to turn them into ice cream since it is so hot outside. I used the popular “One Ingredient Banana Ice Cream” recipe, but added peanut butter, creating a Two-Ingredient Banana Peanut Butter Ice Cream. I was a little skeptical about this recipe. I sliced up four ripe bananas and put them on a large plate. I put the frozen banana slices in my Blendtec blender.
I pulverized the banana slices for a few minutes, scraping down the sides a few times. I mean, his face, I just…want to kiss it all the time. I sometimes think there is no better start to the morning than a cute puppy face.
So CUTE! Okay, let’s move onto food. The only thing better than a gooey lasagna is a gooey lasagna that takes half the time to make. Lasagna that is just as cheesy, noodley and down right delectable as the regular kind, just substantially easier and much lighter. Sure, it’s not as pretty as stacked lagasna made with vibrant vegetables, but guys, trust me when I say this, it’s JUST as savory, creamy, decadent and delicious. If not more. In addition to being oh-so-yummy, this skillet lasagna is lighter than most, completely vegetarian AND has only 7 Weight Watchers Points Plus points!

Cheesy Jalapeño Popper Baked Stuffed Chicken. What happens when you combine Skinny Baked Jalapeño Poppers with chicken?? Oh yeah baby!! Cheesy stuffed chicken breast stuffed with diced jalapeño, cream cheese, cheddar jack cheese, scallions and bacon! I basically deconstructed my jalapeño poppers and stuffed them into chicken and the results where mouth watering!!
I used bread crumbs because I was out of panko, but I think seasoned panko would give these a wonderful crunch like I used on my Skinny Baked Jalapeño Poppers. I made the serving size a generous two pieces, so a simple vegetable, fiesta lime rice, or a salad on the side would make this a complete meal.
