I couldn’t imagine pancakes could ever be as delicious without my beloved whole wheat flour. But I’ve been proven wrong! Over the last few years I’ve been seeking out the best gluten free pancakes recipes and I haven’t been disappointed! I’ve collected what I think are some of the best recipes out there.

Chocolate Overnight Oats | A Full Measure of Happiness. I’ve never really considered myself a chocoholic. I like chocolate, yes, even really like it; but chocoholic–no. Since it was much too late to start baking, I decided I could try to put my craving on hold until the morning, and I set up myself some chocolate overnight oats.

Chocolate Overnight Oats 1/2 C old-fashioned oats (I may have added a few sprinkles more, I wasn’t measuring very precisely)1/2 C water3/4 C skim milk1 T chia seeddash of vanilla2 t cocoa powder1 t honey1 ripe banana, sliced I like my overnight oats to be a little runny (like cold oatmeal soup?
