To test the fad, Lucas and I shared a strip of chocolate covered bacon on a candy shop stop on our Colorado trip earlier this year. Who knew the salt and sugar combination would be so tasty? These double chocolate bacon cupcakes add extra intensity to those sweet shop flavors, combining the texture of ooey gooey ganache with crispy oven-baked bacon sprinkles. Now, under normal circumstances I wouldn’t choose double chocolate cake, but these cupcakes weren’t for me. As a die-hard dessert lover, I usually only swoon over truly sweet (and typically fruity) confections. Chocolate beer batter cupcakes. Maple bacon cream cheese frosting. Crunchy maple-glazed bacon bits. I know it all sounds strange (and a little wrong) on paper, but if you can wrap your mind around all the components and work up the nerve to take the first bite…these cupcakes are the bomb. Srsly, they will literally blow your mind. If you’re a fan of “2 Broke Girls”, you probably recognize these cupcakes from the episode where Max and Caroline go on Spring Break. With that kind of endorsement, is it surprising that I wanted to try them for myself? Now, are you ready to take the first bite? Still not convinced? Chocolate Beer Batter Cupcakes with Maple Bacon Frosting** Recipe makes approximately 24 cupcakes Ingredients: (Cupcakes) 1 cup Guinness1 stick butter1/2 cup cocoa powder1 cup chocolate chips2 cups flour1-1/2 cups sugar1 1/2 teaspoons baking soda1 teaspoon salt2 eggs2/3 cup plain Greek yogurt1 tsp vanilla extract (Maple-Glazed Bacon)
Daring Cooks: Salmon Cannelloni. Manu from Manu’s Menu was our Daring Cooks lovely June hostess and has challenged us to make traditional Italian cannelloni from scratch!
We were taught how to make the pasta, filling, and sauces shared with us from her own and her family’s treasured recipes! Oh hells yeah, we're doing cannelloni this month! I love pasta and cannelloni is an awesomely satisfying dish that looks impressive but really isn't all that difficult to make. I've been bad these past couple months and haven't had time to do the Daring Cooks challenge, so I made sure to get my butt in gear this month.
And, come on, it's cannelloni. I wanted to do something healthy and low in fat and calories, since it is summer and everyone is trying to lose weight and get into that beach-ready state. So this is my cannelloni contribution. Directions Preheat oven to 350F. Heat olive oil in a small skillet over medium heat. Flake salmon into a medium sized bowl. Bake, at 350F, for 20 minutes. Chillies HOT STUFF!
