Fruity Peanut Butter Yogurt Dip

http://www.thewannabechef.net/2011/05/11/fruity-peanut-butter-yogurt-dip/ As good as peanut butter, fruit, and chocolate are, peanut butter and fruit can be damn good on their own, too. With fruit and yogurt, this is a great snack for a toddler. Or yourself if you don’t want to share; I didn’t. I used a strawberry yogurt and the dip tasted just like a PB&J but the recipe is totally customizable. It keeps in the refrigerator for a few days, too—not that they’ll be any extra.

Blueberry and Maple Syrup Oat Smoothie

In addition to all her lovely recipes and her wonderful idea to host our new " No Croutons Required " food blogging event, there are many things that I have to thank my fellow vegetarian blogger Holler from Tinned Tomatoes for, not the least of which is that she is such a dear friend even though she's halfway across the world from me. One other thing that I'm grateful to her for is turning me on to the idea of oat smoothies blended with yogurt and fruit. What a terrific way to combine all the proteins, minerals and fibre of oats and yogurt with the vitamins of fruit into a quick, easy, wholesome and delicious pick-me-upper for any time of day! Holler's blueberry, maple syrup and oat smoothie already inspired me to dabble around with oats, yogurt and a blender to come with my own fermented oat smoothie base to which I added mango and blackberries .

Fruit Salsa with Baked Cinnamon Chips

There are so many things I love about Disney World. The highlight for me is always at night on Main Street watching the fireworks and eating Apple Pie Caramel apples . We bought not ONE but TWO of them, at $8.95 a pop, just to make sure they tasted like the ones I make…and they do. Here’s a refreshing fruit salsa that is perfect for BBQs, baby showers…you name it. I brought this to my friend’s baby shower and the hostess of the shower had made the exact same thing. What are the chances?
A light and colorful party dish with chips. The combination of flavors, sweet and salty with tangy hint of lime makes this a winner. This is also great over grilled fish or chicken!

The Ultimate 7-Layer Dip {Sugar Rush Reinvented: #10}

Today marks the last official day of my reinvented Sugar Rush this year. It’s been a blast making (and devouring!) these {mostly} savory treats for your viewing and eating pleasure. http://www.melskitchencafe.com/2011/12/the-ultimate-7-layer-dip-sugar-rush-reinvented-10.html

Creamy Cashew Chicken Soup with Kale

http://stuffimakemyhusband.blogspot.com/2010/12/creamy-cashew-chicken-soup-with-kale.html It looks a little strange, the idea seems odd, but I assure you -- it's fantastic. If you Google West African peanut soup , you'll get tons of recipe results, so clearly I am not alone in my love for this dish. Usually I use peanuts, but since many of my readers avoid these (either for allergy reasons or because they eschew legumes altogether) I tried it with cashews and cashew butter and was very pleased with the results.
