The final distillate is then matured for at least three years in wooden casks not exceeding 700 litres capacity. Malt whisky is made from three ingredients: barley, water and yeast. The process can be broken down into five stages: (1) malting - the barley is germinated to convert the starches into sugar; (2) mashing - to render soluble as much of the malt as possible; (3) fermentation - through the addition of yeast; (4) distillation - a means of separation through vaporisation and then condensation; and (5) maturation - in oak cask for a minimum of three years.
