Thick, starchy, fluffy, and super salty; bagels don’t get much better than this. Ingredients: Water, as needed1 medium potato, peeled, quartered1 packet active yeast4 cups all-purpose flour½ tablespoon kosher salt1 ½ tablespoons sugar, divided¼ cup olive oil2 large eggs2 cups boiling waterCornmeal, for dusting1 egg white mixed with 1 teaspoon water Directions: 1) Bring a large pot of water to a boil over high heat; add potato and cook 15 minutes, until softened. 2) Transfer reserved 1/3 cup cooking liquid to a small bowl; sprinkle yeast over and stir gently. 3) Sift flour, salt, and ½ tablespoon of sugar together in a large bowl; add yeast mixture. 4) Turn dough out onto a floured surface; knead 10 minutes, until firm. 5) Punch down the dough to flatten; remove from bowl. 6) Preheat oven to 450°F. 8) Transfer boiled bagels to prepared baking sheet.

I get it! But for these little gems I think it’s worth it. These flourless cookies popped up on my radar this past spring when I was really at the height of my low carb experiment. I found them over at Recipe Girl and added them to my long list of recipes to try. The fact that they didn’t have flour intrigued me, and their texture just makes them look ooey gooey good, right? So when vacation time rolled around last month I figured it was the perfect opportunity to make these. Let’s just state something I’m sure most of you already know……wax paper is NOT the same thing as parchment paper. Ten minutes later we were wondering why there was an awful lot of smoke pouring out everytime I opened the oven door. The girls still devoured them though they were STUCK to the wax paper. I didn’t let that deter me though, and the next day I set to making them again.

One Year Ago: Cheesecake Brownies Oven Roasted Chickpeas with Moroccan Spices Printer Friendly Version Ingredients:2 (15 ounce) cans of chickpeas (garbanzo beans)1 tablespoon plus 1 teaspoon olive oil1 teaspoons ground cumin1/2 teaspoon ground coriander1/4 teaspoon chile powder1/4 teaspoon ground cinnamon1/8 teaspoon ground allspice1/8 teaspoon ground ginger1/8 teaspoon salt (or to taste)Dash cayenne pepper Directions: Preheat oven to 400 degrees F.Drain and rinse chickpeas in a colander under running water.
