How to Make Your Own Energy Bars

At times, it’s near impossible. So when I started training for LOTOJA last spring I instinctively shielded my wallet when the realization struck me of how much I would be eating, let alone pedaling, on my long training rides. Armed with the sum of human wisdom (Google) and a tough set of intestines, my homemade energy bars recipe experiment ended with this tasty number. At less than $.20 per 200 calorie bar, it satisfied my hunger and my budget. Energy Bars Ingredients List 1 1/4 cups store brand Crisp Rice (Rice Krispies) 1 cup uncooked quick oats 2 tablespoons flaxseed meal 1/4 cup chopped raisins 1/2 teaspoon cinnamon 1/3 cup maple syrup 1/2 cup peanut butter 1 teaspoon vanilla Step One Stick your oats, flaxseed meal, raisins, cinnamon, and Rice Krispies in a semi-large mixing bowl.

Haha. I did, and I couldn’t believe how good these Power balls turned out. The Power balls are amazing to have for breakfast or as a snack espeacially if you are in a hurry, and need just something you can grab and go. I also found out that you can use them as a gift (if you give them a nice wrap) or even a bribe You’ll see… Once you let someone taste your balls, you will never be forgotten. You will need 1 cup of oats. Ground the oats into an oatmeal/oatflower. Mix the oatmeal with 2 cups of almond meal. Add 3 full teaspoons of baking powder. Mix it well and add about 4 tblsp of honey. Add 4 table spoons of coconut oil – you can melt it in a pot before you pour it into the bowl so that it’s easier to mix it in. Cook 1 cup of carrots until they turn soft and mash them just like you would mash potatoes. Add the mashed carrots into the mixture in the bowl and mix it all well together to create a dough for the balls.

While working on food dehydrator recipes for mashed potatoes, I blended boiled potatoes and broth to a smoothie-like consistency and spread the mixture thinly on dehydrator trays. The potatoes dried into brittle sheets that easily broke into what I call, "Bark. " Potato bark tasted pretty good as a ready-to-eat snack, especially sweet potato bark, but with the addition of hot water, the bark reconstituted back into mashed potatoes. One thing led to another, and soon I was blending and dehydrating other starchy foods like beans, creamed corn, pasta marinara, and pumpkin into bark.
