Baked Herb Lemon Chicken. Ingredients 4 split chicken breasts, skin onKosher saltfreshly ground black pepper1 lemon sliced in wedges, 6-8 slices1/4 cup extra virgin olive oil9 cloves minced garlic- about 3 Tbs1/3 cup dry white wine1 Tbs grated lemon zest (2 lemons) 2 Tbs freshly squeezed lemon juice1½ tsp dried oregano1 tsp minced fresh thyme leaves, plus 4 sprigs Instructions Preheat the oven to 425 degrees.

First prepare the chicken breasts by rinsing them and drying with paper towel. On a cutting board using a boning knife, carefully remove the breast bone leaving the skin on and still attached to the breast. Next add the extra virgin olive oil to a small sauté pan and heat over medium-low temperature, once warmed and the minced garlic and cook for just a minute and stirring constantly. Bake the dish uncovered for 30 to 45 minutes, until the breasts are cooked and reach 165 degrees F. When I received a nice little package from the National Honey Board, I checked out their website and they have tons of great recipes. Many of them are very healthy recipes too. I printed out a few recipes and this one for chicken lettuce wraps using 2 tablespoons of honey stuck out to me. To say my husband loved this recipe is an understatement.

We used both kinds of lettuce because we wanted to see which one would be the best…the answer is, we like them both! You guys, it is SO GOOD. It’s a little involved with several steps (coating chicken, frying a little bit, then baking) but it is all worth it. Trust me. Start with a plate of chicken breast, cut into chunks. Sprinkle on some salt and pepper. Mix up your sauce: ketchup, sugar, vinegar, soy sauce, and garlic powder. Dip the chicken into cornstarch and then in beaten egg. Transfer the chicken to a baking dish and coat all the pieces with the sauce. Bake that for about an hour, turning the pieces once or twice. Serve it all together and enjoy!
