I remember doing something similar when I was a kid, but we used a spool instead of our fingers. I was so excited when I came across every easy to follow video on how to finger knit (scroll to the bottom of the post for the video). Our recent trip to the cabin was the perfect time to teach the kids this simple skill. Plus I love that all that is needed for this project is a some yarn. While I know this will make me sound like the worst babysitter in the world, I have a three year old neighbor I offer to babysit once in awhile who loves to get into trouble! Once, I turned my back for a few minutes, and she walked out of my bathroom, gripping the razor from my bathtub in her tiny little hands! And, she refused to let go when I was trying to gently pry it from her hands. Needless to say, I never turn my back on that child anymore.
She is always in my peripheral vision when I am babysitting. Last night, I offered to babysit again, along with her 1 year old sister, whom I love to hold the entire time. My kids are older now, so it's fun for me to have babies over at my house. On the nights when I'm watching these girls, I know I'm not going to be able to spend much time over a hot stove holding that baby, like last night. Between dry beans, shredded meats, and soups, I use a Crock-pot (slow cooker) at least once a week, sometimes twice! And did the kids eat it? Crispy Baked Chicken Tenders. This is an easy dinner idea, that always gets eaten by my kids, breaded chicken tenders! I used to dip each chicken tender in the yogurt bowl, and then the breading bowl and put them on a baking sheet one by one. As I got older, wiser, and busier, I slowly started dumping more and more of the chicken in the bowl all at once, stirring to coat, and then laying out on the baking sheet.
This change has saved me at least 15 minutes or more! I don't know why I ever coated the chicken one by one. Although I literally hate pictures of meat, I'm posting them anyway. Breaded Chicken Tenders: 1 lb.boneless, skinless chicken tenderloins (about 10-15 tenderloins)1 cup plain yogurt1 cup breadcrumbs (homemade or whole wheat)1 teaspoon season salt1/3 cup parmesan cheese2 teaspoons garlic salt Step 1: Put all thawed chicken in a large bowl Step 2: Dump yogurt on top, and mix thoroughly until all chicken is coated with yogurt.
