So I know I say it all the time, but…..I don’t have a sweet tooth. I really wish I had one, but I just don’t. I love making sweets, but could totally care less about eating them. Maybe it’s because my mom was never a “baker” so to say while my sister and I grew up. Maybe it’s because sometimes my parents and I tend to order a few appetizers to share after a big meal instead of a dessert or two to split (true story). There’s one exception to this….Nutella. Back to Nutella…it’s great; today we have an awesome and super simple salted Nutella tart recipe for you all.
Salted Nutella Tarts Makes 12 Ingredients:almond nut butter crust:1 cup all purpose flour½ cup ground almonds¼ teaspoon salt8 tablespoons (1 stick plus) unsalted butter, cut into cubes1 large egg yolk1 ½ tablespoons ice water1 ½ cups Nutella1 tablespoon sea salt, dividedwhipped cream:1 cup heavy cream3 tablespoons granulated sugar2 teaspoons vanilla extract Directions: 1. Forgotten the simple pleasures of small, honest meals for the sake of a journey towards the creation of an epic recipe. While surrounding myself with people who strive to reinvent the world of food as we know, I’ve been so entranced that I’ve stepped away from the core of who I am and the food I fell in love with.
I am not a moderist cook. I am not a chef. I may never create an epic recipe. I am OK with that. It was through a process, not of self discovery but of self remembrance, that stumbled upon a memory that I had almost lost within my catalogue of food experiences. Years ago, on what turned out to be a 16 hour layover, I was stuck in Pescara Italy. For dessert was a lemon tart. I’ve done my best to make the beer infused version of the tart that was made for me in Pescara, and chose a beer that is nearly as fascinating to me.

So I’m sure everyone has seen the commercial that asks, “Do you dream in chocolate?” …Well, every time I hear that I think of my dad! So, for his birthday this year, when he asked me to make something ‘guilt free’ I KNEW it had to be something chocolate. And so the pondering began…What could I could make that was worthy of a ‘chocoholics’ birthday, yet still allows you to fit into your jeans the next day ? I began to think of desserts I knew my dad had loved in the past, and I instantly thought of Mongolian BBQ’s Mud Pie! If you have never tried this dessert…I’m warning you, you can’t stop at just one bite, it is THAT good! * Note: You could also try this recipe using whatever light ice cream you like and leave out the coffee granules.

Pi equals 3.14 Which makes today—March 14th—National Pie Day. I celebrated a day early with this ultra-fudgey mint-chocolate-chip pie. But it’s ok; there are still a few slices left… so I can will celebrate again today. For quite some time, I’d been meaning to try a mint version of my favorite Ultimate-Fudge Pie recipe. I think I like the mint version even better than the original! Mint-Chocolate Fudge Pie (gluten-free!) Melt the chocolate (either on the stove or in the microwave), then throw everything (except optional ingredients) into a food processor and blend until super-smooth.
