That’s right, I know its swimsuit season, and wedding season. All seasons where us girls need to be looking good. I just can’t bring myself to care about those things, because these little fried sweet fritters are rad. They are lighter than regular doughnuts and just as delicious. Oktoberfest, as in the one that takes place late September to Early October in Munich, is about LOCAL beer. I love all beer, but I have a special affinity for beer brewed close to home. Although this beer isn’t actual German beer, being that I am in California, it is in line with the locavore spirit of Oktoberfest and their rule for never serving any beer at the official Oktoberfest Festival that is not brewed in their own backyard. For this recipe, which I loved SO much, I used another incredible local craft beer, this one came from Bison Brewing. Beer Creme Brulee: Creme Beer-lee Put the cream, and beer in a sauce pan over medium heat.

YUM! I’m back with a recipe using my Chicago Metallic Mini Cheesecake Pan that I just love. My Chocolate Chip Cookie Cheesecakes were my first experiment using this pan and these are my second experiment. I’m just so impressed by how easy it is to make these using this pan- love it! 18 graham cracker squares (9 sheets or about 1 1/2 cups)1/3 c. butter1/2 c. milk chocolate chips1/4 c. whipping cream2 c. mini marshmallows1 1/2 c. cold milk1 box (4 servings, 3.9 oz)instant chocolate pudding1 (8 oz) container of Cool Whip (thawed in fridge)1/4 c. mini chocolate chips (as topping) Crush graham crackers into fine crumbs.Melt butter and add to graham crackers, mixing until well combined to make crust.Prepare pan by placing disks into the bottom of each cup.Evenly divide crust mixture into all 12 cups, saving about 1/4 cup to use as topping later.

Well, I guess it’s healthier than normal Puppy Chow, because I didn’t use butter. Or peanut butter. But, then again, I did replace those two things with cake mix…Either way. This stuff is good. I’ve tried really hard to stay away from the boxed cake mixes, because I value being able to make things from scratch.
