Gluten-Free Pop Tart? YES. | Falafel and the Bee. Me and the internet are a bit dangerous together at night. Before bed. I peruse all that is out there in the way of craftiness, and then… there’s the food. It really isn’t the smartest idea to look at beautiful food before bed because I always end up going to sleep hungry. Anyhow, last night I started looking and I found a Gluten-Free Pop tart.

I used: 1 cup GF flour (I used Namaste Perfect Flour Blend) 1 egg (plus 1 to brush) 1 stick of butter (1/2 cup) less than 1/4 cup of water (I just stopped adding it when the ball of dough began to form) I made small balls and then rolled them out and trimmed them into rectangles. Bake at 400 for 17-20 minutes. I filled some with grape jelly/fruit spread and some with mini chocolate chips.

*If you try this little project make sure you use parchment paper under the tarts. Being Gluten-free isn’t all that bad. I don't FEEL like cooking! ) I LOVE using my crock pot and never thought about pre-assembling meals (until I found PINTEREST) that I could freeze & dump in the crock pot before I head to work in the A.M. There is nothing like coming home to a house that smells like you've been slaving away all day making a gourmet dinner, when in fact the crock pot has done all the work!
