In Praise of Sous Vide - Raymond Blanc: Le Blog

Not via Heston Blumenthal's magic but because of Gordon Ramsay, who overnight became a pioneer in demystifying the technique of sous vide for his gastropubs, and doing so attracted negative national press attention. Gordon is nearly right when he says "there is not a chef in this country who doesn't use sous vide". But to be fair to the other chefs they use sous vide in their own kitchens. I never thought that I'd find myself giving some support to Gordon, but on this occasion I think he's taken a bum rap .

After the holidays I have the hardest time falling back into the rhythm of my normal life. As I sit here looking around and the gift boxes, empty toy boxes and those dang twist-tie things ; and don’t even get me started on the holiday decorations that eventually need to be packed away, I’m feeling extremely disorganized and overwhelmed with it all.
Yesterday as I stood in the kitchen trying to figure out what to make for dinner I wondered to myself, how do those people do it on those shows where they are given random ingredients and are suppose come up with something genius. I think I stood there for a solid 20 minutes looking in the cupboards and staring into the freezer hoping that I would be struck by some ingenious idea. Then I saw the oranges and it hit me “O-raang Shh-ikun”….that is orange chicken if you can’t understand the accent.
