Polenta, Parmesan & Thyme Crackers. It’s been a while since the last time I had homemade crackers. The problem is whenever I bake crackers, they don’t seem to last past 2 days. Okay fine, I may have exagerrated. This is not really a problem. I am blessed that my beloved enjoys the stuff I made. For me baking has to be as simple as possible. (recipe tweaked from Chocolate and Zucchini) Makes about 3 baking trays worth of crackers – see the photo below What you need:- 150g / 5 1/3 ounces plain flour + extra while working on the dough100g / 3 1/2 ounces polenta50g / 2 ounces parmesan, finely grated4 stalks of fresh thyme leavesA tsp of salt *optional*3 tbsps olive oil1/2 cup water *I omitted salt from the recipe as I wanted to pair these crackers with brie which is already salty.
Instead of adding salt in the dough, you can sprinkle the salt after they are done. Let’s get started:- (1) Add flour, polenta, parmesan, thyme leaves and salt (if using) into a mixing bowl. These homemade graham crackers are delicious, simple, and healthy, so you can feel great about feeding them to your little ones! Homemade Graham Crackers ingredients: 2 cups whole wheat flour 1 tsp cinnamon 1/2 tsp baking powder 1/2 tsp baking soda 1/2 cup butter, melted 1/2 cup honey directions: 1. mix dry ingredients together and set aside. 2. in a separate bowl mix together the melted butter and the honey. 3. add honey/butter mixture to dry ingredients, stir until combined. 4. drop mixture onto cookie sheet and roll out, making sure the edges reach the sides of the cookie sheet. 5. bake for 8-10 minutes at 400 degrees, cut quickly once out of the oven. Tips: I used a glass to roll the mixture once it was on the cookie sheet. my cookie sheet was 10.5x15.5 inches, though i probably could have used a larger sheet and rolled them thinner since they puff up in the oven.

Graham Cracker's Recipe Ingredients: 1 1/2 cup all purpose flour 1 cup whole wheat flour 1 cup dark brown sugar 1 tsp baking soda 1/2 tsp salt 100 gm 93 1/2 oz) unsalted butter, cut into cubes & chilled 1/3 cup honey 5 tbsp milk 2 tbsp vanilla Method: In a food processor, add the flours, brown sugar, salt and baking soda. When I put these on a plate beside Ritz crackers Max will clean them off the plate without even touching the Ritz. That”s saying something. Homemade crackers are GOOD.
And, they”re so much healthier. As an added bonus they come together quickly and easily. These are a perfect offering to bring to a party or get together, especially when you know the hostess has all the bases covered. I dressed mine up a bit with some chunky salt and sesame seeds, which is completely unnecessary but fun to do if you want to make a statement. These are every bit as delicious as the original, so much fun to make and come together in minutes. If you”ve never made homemade crackers before this is the perfect recipe to get you started. Homemade Wheat Thins I like to roll doughs like this on a piece of parchment paper because it makes it easier to remove and transfer the cut crackers to the baking sheet.
