Summertime Tutorial for Sunflower Cupcakes

Awhile back I made these sunflower cupcakes for my husband's birthday and summer feels like the appropriate time to post a tutorial for them. This is my version of the quite popular sunflower cupcake. (Just do a Google image search for "sunflower cupcake" and you'll see what I mean.) You'll need:some cooled cupcakes (duh!) Some yellow frosting (I used Betty Crocker cream cheese flavor and added some yellow food coloring)a pastry bag#98 ruffle decorating tip #30 closed star decorating tiporeo cookies (one for each cupcake) Separate the oreo cookies. Attach the #98 ruffle decorating tip to your pastry bag and fill the bag with delicious yellow frosting. With the teeth side down (facing the counter) pipe the first layer of frosting petals around the cupcake. Get ready to make the second layer of petals with the same crescent-shaped tip. I'm glad to be back from vacation. Although it's nice to break routine every once in a while, I'm just as happy to return to my routine. It keeps me grounded AND I really missed baking. I missed creating. I actually brought a sketch book along with me to jot down my ideas as I "relaxed". This week, my sister Kathy brought the kids in to the salon for haircuts and while her own hair was being done the kids walked across the parking lot to a take-out Italian restaurant for "snacks". New Yorkers made them famous, however their creation came about when bakers needed to put excess batter to use. Hmmmmm.....a likely story. Anyway, since my sister was the one to suggest the Black and White's, I thought it only fair that she share in the baking responsibility. My mother's Kitchen Aid mixer was her pride and joy. After a couple of hours of research, we decided to use a recipe adapted from a bunch of different baking websites which also included Zabar's in NYC.

Halloween Monster Cakes

I made these two cakes for the bake sale and cake walk at the twins Halloween school carnival. I made cake pops too and will share those shortly. These cakes are very simple. Anyone can make them, as long as you have patience and a DVR'd program (or two) to watch. Instructions to make one of these fun monster cakes: Bake 2 6x2" round cakes (or any size you want if you want larger cakes) - I made chocolate fudge cakes. Once cooled, put icing in between them and stack them on top of each other.

Cover the entire cake with icing, it doesn't matter if you get crumbs in the icing because it will be covered up by the 'fur' anyway. Using black and white fondant, cut out the eyes and mouth and put them straight onto the icing. Mix some Wilton dye into plain white icing to make the color of your choice for your monster.
