I read of all the benefits of eating fermented foods and wanted to try this. It was a great learning experience. I had successes but I also had failures. I started reading other books on fermenting foods and started to work to develop a method that worked for me. I don’t have large crocks to ferment food in; you don’t really need these to have success with fermenting. I read and learned of the benefits of lacto fermented food. In order to make lacto fermented foods you will need some whey. You can achieve the same results without the whey by using salt only. I have now had some personal experience to back this up.

If any of you guys grow pickling cukes, this is absolutely worth trying. These pickles are to die for. I gave pint’s away in 2008 as part of a gift basket. I canned over 100 pints last year & I’ve been out tor 2 months. Now people are dropping of cases of mason jars for me to fill. == Hotwired’s Sweet Pickles === Prepare the Following: 4 Quarts of Sliced Cucumbers cut 1/8” Thick (8 Pickling Cukes) 6 Medium Onions Sliced 1/8” thick rings 1 Green Pepper cut in 1/4” – 3/8” wide strips 1 Red Pepper cut in 1/4” – 3/8” wide strips 3 Cloves of Garlic (3 Sections cut up) 2 Trays of Ice Cubes In a Large Pan or on a Cafeteria Tray: Layer ½ the Cukes, Onions, Peppers, and Garlic in the Pan Sprinkle half the salt over the tray, and add 1 Tray of Ice Cubes.

Well, not quite but it is 100 plus acres of undulating ground at Broomfield (Creswick), Victoria. The land is predominately cleared, except for the house paddock which has a notable stand of White (various) Gums and Messmate (Stringybark) trees. The outer paddocks have been used for grazing, hay :-) and most recently some cropping. We’ll stick to the livestock and improve the area with them in mind – a bit of agroforestry with fodder trees being part of the reason… Well, we shall see how it all unfolds.
