Gusto Ristobar « Gusto Ristobar is the latest from the GMI Group (Gusto Made in Italy), who run what I think are three of the best Italian restaurants in town: L’Oca Giuliva, Maccheroni & Co and Pane & Vino.

With Gusto they are trying a new concept. Located in front of the Cathedral’s Puerta del Perdón it is clearly geared to attracting visitors with its sidewalk terraces and “quick lunch” snacks, along with a variety of Italian, Spanish and American dishes on the bar menu. The upstairs restaurant is open from 7.30 pm daily and offers an everchanging selection of fresh pastas, fish and meat dishes (Spanish and Italian), and authentic paella (expect to wait 30 minutes). Some of the restaurant dishes are also available downstairs at the bar, but as it’s still early days – Gusto has been open less than a month – there is still some experimenting going on to see what works best. Chef Diego Solis’s exquisite tapas can be enjoyed in the bar area; raciones are served in the dining room, prettily situated in the back patio, and outside on the sidewalk terrace. Literally. So you probably wouldn't expect me to choose only 3 of them! Actually, it has been quite difficult to make a selection and each one has been carefully picked because it clearly stands out from the rest. Obviously, one of the main features that I look for when I go to tapas restaurants is the quality of their food. But I think that other things such as the atmosphere and the service are equally important. The main interest of these fantastic bars is that (a) you won't feel that you are an alien and (b) you'll have the chance to observe what locals eat, drink, do and discuss.

On the other hand, it is the epicentre of tapa culture and cuisine. The tapas here aren’t free, as they are in Granada for example, but they are good — maybe the best that Spain has to offer. And it isn’t as if there isn’t any good value. In the more generous establishments, three tapas (somewhere between five and ten euros, depending on choices) will easily feed two people.
