I can say this is the best macaroni and cheese recipe ever because it's not really my recipe. I tweaked it a tiny bit - basically made it even more fattening - but otherwise, it's someone else's. It's from someone named Bev, who posted her recipe on Recipezaar and to whom I am eternally grateful. See, macaroni and cheese is pretty much my all-time favorite food.
This last week in Beaverton has been a frigid one for sure; we have had snow and extremely cold temps down in the mid teens with the wind. We have been trying so hard to stay warm on the outside as well as the inside, so what better way than some hearty comfort food. To us there is nothing more hearty and comforting than a big dish of fresh hot cheesy lasagna, we really wanted all the same flavors but in a great deal of less time.
Stuffed shells are a beautiful, simple thing: pasta, filling, sauce and cheese. What could be better than this quiet perfection? More! More of everything! This recipe is shells to the max! White sauce, red sauce, five cheeses!

And when I can manage to combine them into a casserole, I am happy because there are a lot of days where I have limited time before dinner and I love to be able to pull a delicious looking dish out of the refrigerator, and toss a salad while it cooks. This recipe is my own concoction and is a good one for the family (and then for leftovers) to take to a potluck, or even for company. Make it early in the day or even the day before.
