This is by far the best recipe you'll ever try for Minestrone soup – a classic, hearty Italian soup with tomatoes, white beans, vegetables and pasta. You can use Swiss chard or baby kale instead of spinach if you wish and you can omit the pasta if you don't want the carbs – honestly you won't miss it with everything else in this soup.

It's just my preference, but I like to puree the beans in this soup, it thickens it and you don't even know they are in there (great for picky eaters). What makes this soup extra special, is using the rind from a wedge of parmesan or Romano cheese. I always stash them in my freezer just for soups, if you don't have one toss some grated cheese into the soup while it's cooking. This is an old recipe I've been making for a very long time!

Originally I shared this as a slow cooker recipe in 2009, which is super convenient when you are working all day and want to come home to a cooked meal. Hope you enjoy! Ingredients: Crock Pot Version: Stove Top Directions: Baked Potato Soup. Everything you love about a baked potato loaded with cheddar, bacon and chives, in the form of a soup! I've had several requests to make-over this soup (You really like to challenge me, don't you!) I was a little stumped on how I was going to take something as carb rich as potatoes, with added fat like sour cream, cheese and bacon, light! My second attempt was cauliflower, knowing how much you all love my Creamy cauliflower puree recipe and it was a winner. It really made me feel like I was eating a loaded baked potato, without all the guilt.

Whoops. I had some extra time after grocery shopping and weekly meal prep this afternoon, so I said to heck with it and dragged the rest of my Christmas decorations out! After adding red ornament accents to the new mantle, and hanging the stockings with care… I turned my attention to the tree. Ben and I are still rocking my pathetic Charlie Brown Christmas tree from my first apartment right out of college, but what it lacks in fullness and height, I make up for with cute and meaningful ornaments. :) Someone around here thinks non-themed trees are tacky, but I think they’re fun!

While no ornament matches the other, they all have a significant meaning. From the kicking Rockette’s ornament I picked up when my Mom and I saw them last year, to the plump penguin I bought because it reminded me of Ben’s obsession with ‘em (true story) I think they make the tree cheery and personal. I set up the decorations while Ben supervised from the couch. Babe? I. I feel so bad for him!! Beef & Barley Soup. Tuscan Kale & White Bean Soup. When I came across a recipe for an ale and cheddar soup recently on From and Away I immediately pinned it thinking that it would be perfect to make some time around St. Patrick's Day.

In addition to the ale and cheddar this soup contains plenty of bacon and spicy jalapenos peppers so there was really no way that I could resist making it! This recipe starts out by cooking the bacon, and I used a double smoked bacon to add a smokiness, and then uses the bacon grease to saute the onions, celery and jalapeno peppers so that you do not loose any of that bacon-y goodness.

Next up is some garlic and thyme for flavour followed by some flour to thicken the soup before adding the ale and broth. Lets not even try to fool ourselves here, there is nothing at all healthy about this soup, but it is so so good!
