Whole-Wheat Gnocchi with Sausage & Spinach

Gee, Trader Joe’s Night keeps coming a day earlier and earlier each week, doesn’t it?! ;) On tonight’s menu: Whole-Wheat Gnocchi with Sausage & Spinach! As you know, I HEART gnocchi. Homemade, store-bought, fresh from a Roman trattoria… You got it, I’ll eat it. A reader sent me a recipe for gnocchi & sausage a couple weeks ago, and I thought this would be perfect for it! (it’s too bad store-bought gnocchi is so unfortunate looking, right?! These babies cooked up similar to most other gnocchi – a few minutes in the hot tub is all it takes. Meanwhile, in a skillet next door, I sautéed a shallot in some olive oil. After the shallots were browned, I added in 3 Sun-Dried Tomato & Basil Chicken Sausages, removed from their casings. TJ’s has an awesome variety of chicken sausages. Check out the ingredient list! I also added in some fresh chopped garlic. When the sausage was cooked, I added in 4 cups of baby spinach and let it wilt down for a couple minutes.

I've already put in a Pastichio request to my mom (thanks mom!) But my stomach has been shouting that two weeks is not soon enough. My mind tried to stay strong, telling me that all the baklava and fresh hummus would be worth the wait...but alas, I have little to no will-power when it comes to food, and so I buckled under the pressure and came up with this cheesey and gooey melange of my favorite Greek food components. Feta, spinach, roasted garlic, sun-dried tomatoes, caramelized leeks, oregano, onions, and my little cheat ingredient, Asiago Cheese. You probably (okay, definitely, they're so gorgeous how could you not?) Getting a bit ahead of myself there. If you already do any of those things, just leave a comment on this post saying you do. Maybe, simply because uttering the word forces the ends of your mouth to turn up ever so slightly. Or could it be that it quickly serves as your final warning that the camera is about to go click. Another one of Ben’s and my favorite games to play is “guess the ingredients,” where whoever has cooked the meal makes the other one try and, well, guess all the ingredients in the dish. It’s all very complicated. A component of tonight’s supper was Ben’s #1 all-time favorite food ever, mashed potatoes, but I added a little somethin’ somethin’ to ‘em and wanted to see if he could figure out what it was, so I challenged him to a round of GTI when he got home from work today. Here, let me just stick my entire tongue in the extra mashed potatoes to try and figure out what’s in there. What? Jalapeno Popper Dip. I had been coming across this recipe for jalapeno popper dip on sites like Big Red Kitchen for a while and I had just been itching to try it.

I really like jalapeno poppers and this dip has all of the elements that make jalapeno poppers so good, from the jalapenos to the cream cheese and cheddar cheese to the crunchy bread crumb crust. With the temex kick that I have been on lately it was the perfect time to try this dip out. The jalapeno popper dip was easy to make and the results were great! I increased the amount of jalapenos and added some fresh jalapenos for even more jalapeno flavour and heat. The dip was nice and warm and gooey and oh so tasty!
