I have been creating a great deal of gluten-free recipes lately, since my daughter is on a gluten and casein free diet, and decided to try and tackle creating a gluten and dairy free version of this bread. Admittedly, this gluten-free focaccia takes a little time to make, and the sticky dough can be a little challenging to work with, but the results are worth the extra effort. My daughter and I enjoyed this flavorful bread as a special snack last Friday night, along with wine for me and juice for her.

I’ve got a doozy for you today. Spinach and Artichokes Melts! Yes! So you know your favorite party dip, spinach and artichoke? Yeah, I totally slathered that ALL over some bread and grilled it up grilled cheese style. Have you guys ever been to a Claddagh Irish Pub? My grandma and I would go shopping on the weekends a lot, we like to shop and she loves to go out to lunch. I have no idea what was in that melt other than spinach, artichokes and chicken. Basically the spread is a lightened up version of spinach and artichoke dip.

Trust me this is gonna brighten your Monday right up. Spinach and Artichoke Melts Ingredients 1 tablespoon butter 1 clove garlic, minced or grated 1 tablespoon flour 1/2 cup milk (I used 2%, but whatever you have will be fine) 1 ounce cream cheese 1/2 cup shredded mozzarella cheese 1/2 cup grated parmesan cheese 1/2 cup greek yogurt (I used 0%) TFF & FIC - Grilled Cheese Forever! It's gone by so fast, and I feel like I've accomplished so little! But I've enjoyed a lot of it, so I should satisfy myself with that. I do have one teensy regret though; that I couldn't celebrate Grilled Cheese Month the way it deserves to be celebrated! My original plan to was make one new grilled cheese sandwich every week (which would've been easy enough, because the Lord knows about my undying love for grilled cheese!). But somehow, something always seemed to derail me. Anyway, back to grilled cheese (see?! The thing with Tyler is that he has excellent timing (hmmmmmmmmm, perhaps in more ways than one, eh?!).
