You can make this recipe with a pork tenderloin if desired but the pork loin filet that I bought was almost $2 less per pound than the tenderloins.

Tenderloins are leaner and smaller which means you’ll get more surface area in contact with the marinade and more flavor. But, the pork loin was excellent all the same. FYI- chili powder isn’t all that spicy so don’t be too afraid. Oh, also, you can let this marinate over night or while you’re at work for extra flavor. Here's a baked macaroni and cheese recipe that even got my skeptical daughter's approval.

I lightened this by reducing the butter, I replaced cream with skim milk and chicken broth, and I added some fresh baby spinach. I liked Sargento 2% cheddar cheese because after trying several cheddars, this was the one I felt tasted best and melted beautifully. I also use Ronzoni Smart Taste which is less points than regular pasta, with the same great taste. Whole wheat or low carb pasta would work with the same points too. If you want to make this a quick stove top mac and cheese, you can serve it without the breadcrumbs and grated cheese. Thai Chicken and Pineapple Stir Fry. A Thai inspired stir fry dish with a wonderful savory, sweet and spicy flavor combination made with colorful bell peppers, fresh pineapple and chicken. A few months ago I was invited to a Thai Kitchen event where their chef demonstrated a few recipes using their new Thai Kitchen sauces and this was one of the dishes they made. They kindly shared the recipe with me which I slightly modified to give it more kick. If you don't like your food too spicy you can leave out the chili pepper.

This is one the easiest pasta dishes I make for my family, I make it at least twice a month when I need a quick meal and they all devour it. With just a few ingredients and only one pot, this recipe will put dinner on the table in 15 minutes.

I'm really not sure why I haven't posted this sooner, this is the recipe my daughter wants to learn how to make when she is away at college. In fact, as I was photographing this today, she was standing right next to me with a plate and bowl in hand. A few quick tips for making this perfect every time. Roast Beef, Arugula and Shaved Parmesan on a Baguette. Crusty bread, peppery arugula and fresh shaved Parmesan cheese makes an everyday cold cut like roast beef taste like a gourmet sandwich. Perfect for lunch on the go, pack along some veggies and fruit on the side and you have yourself a meal. When I make a sandwich, I like using good crusty bread like a baguette or French bread, which is a perfect fat free bread option.

A trick I like to do when I make a sandwich is to scoop out some of the inside of the bread, which allows me to make a larger sandwich, and it leaves room for the meat and lettuce. I personally enjoyed most of my sandwiches dry but if you prefer adding mayo or dressing, you'll have to adjust the points. I bet horseradish mayo would be lovely on this! I've been getting lots of emails from working folks who need help preparing quick and easy lunches on the go that don't require heating up the kitchen. Roast Beef, Arugula and Shaved Parmesan on a Baguette Directions: Sofrito Chicken Stew. Skinless chicken drumsticks, slowly stewed in light beer (it cooks out) with scallions, tomatoes, cilantro, peppers, garlic and spices.

As the colder weather slowly approaches in the coming months, this dish will warm your kitchen and hopefully give you the same comfort it gives me. My favorite way to eat this is served over rice with a slice of avocado. I make so many variations of this dish depending on what I have on hand; sometimes I add baby potatoes, yucca, or I'll make it without the beer.

If you are really opposed to cooking with alcohol, perhaps a non-alcoholic beer or simply adding water would work instead. For those of you who already make this, and perhaps have this printed out, I made some slight modifications to this and previously listed the servings for two pieces of chicken, but realistically one piece over rice with sauce fills me up perfectly. Meat lovers will LOVE this quick weeknight steak dish! Mushrooms and onions are the perfect compliment to steak, plus they add bulk without added calories or fat. A great example of using steak as a condiment. Originally when I made this steak dish, it was intended for my steak sandwich recipe, but since this is also so good over rice, I felt it deserved it's own post.

(Steak and cheese sandwich recipe coming tomorrow!) Have all your vegetables sliced and ready before you start cooking, this takes only minutes to make once everything is prepped.
