Once one has learned to stop fighting it and to embrace it instead as an opportunity to get some work done, the possibilities are endless. It usually hits at a quiet time, so if thinking is necessary, it can actually be accomplished. Stuff like housework, which is never at the top of my favorites list, can be done without having to encroach upon valuable daylight hours. Although I’ve enjoyed a handful of different scone recipes in the past, I believe I have finally perfected the ultimate dough formula in these chocolate chip scones. Everyone has different tastes, but my favorite type of scone is delicate and flaky in texture, and is buttery while lightly sweetened. This is one recipe where I no longer use a stand mixer in order to avoid over mixing the dough. Careful handling of the dough ensures a lighter and more airy scone. Baked S'mores. I am making it up to you with this one, o man. Another awesome birthday present I got was this gorgeous thing: So of course I have been baking up a storm!! Now let me tell you, you BY NO MEANS, ever have to have a mixer to bake-I have done everything for years by hand or with a hand mixer. By the time this past weekend hit, I think anything requiring technique or poise in the kitchen would have had induced some kind of cerebral short circuiting – I imagine there would have been sparks, probably some twitching and likely even drool. I adore all the Rosanna Pedestals from Layla Grayce (My favorite home decor site!) I'll get to Layla Grayce very soon... 'Tis the season when peppermint takes center stage and I've been in overdrive making new recipes like my peppermint patties, and my peppermint mocha. Although I couldn't resist creating one last holiday peppermint dessert, and this one is extra tasty!!

Instead of a simple peppermint chocolate cupcake with butter cream frosting, I decided to step it up with peppermint infused buttercream and a gooey ganache topping. Using my basic vanilla frosting recipe, I added pure peppermint extract and powdered peppermint flakes, which really boosted the pepperminty goodness! I used a 1M tip to frost the cupcakes, and a spoon to gently drizzle the ganache over the top of the frosting.

Creamy Lemon {or Lime!} Bars. This is a twist on the classic lemon bar, and it’s more of a little lemon cheesecakebar. I much prefer it to the traditional lemon bar.Heck, I think the addition of any type of cream or cheese improves just about any recipe! They are super easy to whip up and to me, with their bright lemony flavor, they just scream spring time.They’re fresh and light but taste sinful at the same time.They make a great ending to a simple meal, or a perfect treat for a party or gathering. Watermelon Lime Sorbet Slices.

A sweet and tangy watermelon lime sorbet is a great way to cool off in the summer. As a bonus, this recipe is frozen back in the watermelon rind and cut off into slices. It’s hot. The type of heat where when you step outside the door and your skin is wet before the door swings shut behind you. It’s a hot that hangs in the air, letting you breathe it in, that is cured only by two things: being completely immersed in water or hiding indoors, the air conditioning cranked as far as it will go.I find that the heat makes me very unmotivated to do things like take a walk, water and weed the garden (though I have forced that one on myself) and prepare food and eat it.

However, when the promise of cooking provides ice cold watermelon sorbet, I just may be convinced. When your simple syrup is cool and watermelon chunked, blend them together in a food processor or blender until smooth. Lemon Blueberry Cheesecake Bars.
