Fresh Strawberry Coconut Margaritas

This isn’t the fourth recipe that I planned on sharing with booze this week… it’s the fifth. The fourth I have yet to share because I ended up making these margaritas late one afternoon for a… meal. Dinner to be exact. I only got away with that because my husband has been gone for five days, and I’ve barely cooked a thing. I have: Consumed a TON of guacamole. Continued to write on the foggy shower door mid-shower. I haven’t: Had anyone here to clean my mop of hair out of the shower drain, which has utterly… sucked. Had anyone here to judge my consumption of peanut butter dipped spoons covered in mini chocolate chips. But on a positive note I watched more chick flicks than your gag reflex could handle. And on a night when I didn’t have margaritas for dinner, I made a cookie butter smoothie. Antics like that could never go down if I wasn’t alone. eat me with margaritas! I can’t even stand myself. Fresh Strawberry Coconut Margaritas 2 ounces Grand Marnier 2 ounces lime juice. Skinny Piña Colada.

Skinny Piña Colada

Well, I successfully recreated it at home! Wahoo!! This Skinny Piña Colada has nowhere near the fat and calories of a regular Piña Colada because I used coconut water instead of coconut cream and added just a splash of pineapple juice. Ingredients: 2 oz Barcardi Rock Coconut Rum5 oz coconut water2 oz pineapple juice Directions: Combine ingredients in a cocktail shaker with ice.Shake and strain into a glass filled with ice.Garnish with a slice of pineapple and/or a Maraschino cherry (optional).Drink and enjoy! Makes 1 cocktail I have a feeling that this Skinny Piña Colada is going to be my go-to cocktail for the rest of the summer. It’s popsicles, ice coffee and these, Riesling strawberry slushies. Forget the straw, give me a spoon. a BIG spoon. If you’ve already moved right into Fall, it’s okay. There’s no rules for when you can or cannot enjoy an alcoholic drink, if you ask me. How perfect would these be for a baby or bridal shower?? Not only is this eat-straight-out-of-the-bowl worthy, but it’s SUPER duper easy! Riesling Strawberry Slushy PRINT Recipe Ingredients 2 1/2 cups hulled strawberries1 bottle [750ml] dry Riesling1 tablespoon fresh lime juice2 1/2 tablespoons sugar Directions Reserve 1 cup of the Riesling – cover and place in the fridge to chill. In a food processor, puree strawberries with the remaining wine, lime juice and sugar.
