A few weeks ago, I shared with you one of my favorite treats from the State Fair of Texas, Deep Fried Cookie Dough, well here is another of my favorite fair foods… As you can probably guess from the title and the picture it is funnel cake!
Only this funnel cake is in a much friendlier portion size. Typically State Fair funnel cakes look like this.. The cake is the size of the plate and you feel sick if you eat one by yourself (not that I would know from experience or anything) I decided that I wanted to make funnel cakes that were a more manageable size. This required a few modifications from the traditional funnel cake. Traditional funnel cakes are made by filling a funnel with batter and then moving that funnel over hot oil in circular criss crossing motions to make the iconic funnel cake shape. As you can see, the principle is still the same, only with using a smaller bottle you have more control over your cake’s shape.

Pink Lemonade Cake Ingredients 1 cup homemade unsalted butter, softened 2 cups white sugar 4 eggs, room temperature 2-3/4 cups flour 2-1/4 tsp baking powder 3/4 tsp salt 1 cup frozen pink lemonade 1 TBS Lemon Zest Pink food colouring Frosting: 1 cup butter, softened 7 to 8 cups powdered sugar, sifted 1/2 cup thawed pink lemonade Lemon zest to taste Pink food colouring Directions Preheat oven to 350 Sift the dry ingredients together and set aside. Beat the butter for 3 minutes until light and fluffy. Add the sugar and beat another 3 minutes. Add the eggs, one at a time, and beat thoroughly after each addition. Start adding the flour mixture one cup at a time, and alternate with the lemonade; ending with the flour mixture, mix well and pour into prepared cake pans. Bake for 25-30 minutes or when a knife comes out clean Let cool completely. Peanut Better Reeses Cake.

I hope everyone had a great holiday break, I know we did! We took a 10-day long vacation to visit family and friends in Pittsburgh for the holidays. It was really great to unwind, recharge and just enjoy spending time with everyone.
These two had an especially good time over the break. They were spoiled rotten for Christmas with tons of gifts from both sides of the family. I feel like I could easily open my own Toys R Us in my house right now. (Sorry in advance for the photo bombing!) We made up for lost time and spent lots of time with family. I'm glad we ended up not getting a Christmas tree. While we were in town, we also got to celebrate our little niece Avalene's second birthday. The party was "snow" themed, so we pretty much added lots of snowflakes to the existing Christmas decorations and made our own little winter wonderland.
I just loved her winter scene on the table, complete with little snowy cupcakes! Above the table, we strung lights and little tissue paper poufs.
