Instead of the traditional way of slicing the biscuit in half, & placing a slice of ham inside – I have diced the country ham up & baked it inside of the biscuit! Yes – I said INSIDE of that biscuit.

Mercy, is it good! Country Ham Stuffed Biscuits Add this recipe to ZipList! Ingredients: Instructions:Add the diced country ham to the biscuit dough at the same time as you add the buttermilk. Dump the dough on a flat surface & form into a rectangle with your hand, just like you do in the recipe for Mama’s Biscuits. Made this AMAZING creation this morning as a special treat for my daughter’s 2nd birthday breakfast. Pretty sure this is going to be a staple breakfast until (if ever) I get sick of it lol Although I do love my sweets, I’m not one for an overly sweet breakfast so I adapted it and have renamed it accordingly. Here is my “Blueberry Breakfast Grilled Cheese” (could also be known as “homemade blueberry pop tart” because that is totally what it reminded me of while eating it!) Ingredients: Cream cheeseIcing sugarWhole wheat breadButterBlueberriesSandwich maker (I’m sure you could use a frying pan, but the sandwich maker sealed everything in which was perfection) Directions: Mix cream cheese with icing sugar (to taste – I didn’t want it super sweet)Butter outside of breadSpread cream cheese mixture on the inside of one slice of breadPlace butter side down on sandwich maker and top with blueberriesPlace second piece of bread butter side out on topClose lidGrill for about 1 minute.

Buttermilk Blueberry Breakfast Cake. I swear buttermilk is magic. I’ve dwelled on this before. Buttermilk seems to turn everything to gold. Super-moist, super-delicious gold. Anyway, I needed a simple, summery, breakfasty, cake-like-but-not-dessert-like recipe to make this morning. One of Ben’s friends had crashed here last night, and I thought it only appropriate to treat him to a proper breakfast. In other words, I was craving sugar and carbs. Nobody. Buttermilk-Blueberry Breakfast Cake Ingredients ½ cup unsalted butter, room temperature 2 tsp. lemon zest or more — zest from 1 large lemon 7/8 cup* + 1 tablespoon sugar** 1 egg, room temperature 1 tsp. vanilla 2 cups flour (set aside 1/4 cup of this to toss with the blueberries) 2 tsp. baking powder 1 tsp. kosher salt 2 cups fresh blueberries ½ cup buttermilk**** 7/8 cup = 3/4 cup + 2 tablespoons** This 1 tablespoon is for sprinkling on top*** To make homemade buttermilk, place 1 tablespoon of vinegar or lemon juice in a liquid measuring cup.

Instructions. Cranberry Scones. I will warn you-these little babies are quite tart. I adore a good scone with coffee, and I would definitely put these into that category. BUT when I make them again I will probably add a generous drizzle of a sweet and creamy glaze to the top before serving, as I think a little sweet to balance out the sour would really put these over the top.

This scone recipe is quite customizable, as you could use any type of berry (blueberries-yes!) In place of the fresh cranberries and produce a delicious scone. So there’s that.
