I went to see tUnE-yArDs on Monday night with some friends, and as always we wanted to cook a meal that somehow related to the show we were heading to. Sometimes this is hard to do , but other times it seems to come naturally . A creamy macaroni and cheese recipe that will satisfy both young and old made with Kerrygold cheese and butter from grass-fed cows. This mac and cheese reheats beautifully the next day with just a bit of milk or cream stirred in. Ole pointed out a few weeks ago that our children were growing up with a different food experience than either one of us had. Things like peanut butter and jelly sandwiches, mac and cheese lunches and daily desserts are not the norm over here. Rather than growing up on lunches made from blue boxes and smeared on sandwich bread, our kids are generally dining on leftover fried rice , sandwiches made from leftover meat and a variety of soups and pastas , which do, in fact, include macaroni and cheese every so often. So, when our Costco recently started stocking their shelves with Kerrygold products, I felt inclined to share one of my favorite macaroni and cheese recipes with you.

Falafel loaf

If using dry chickpeas, soak them overnight in plenty of water and a dash of baking soda; rinse the next day and drain thoroughly; if using canned ones, rinse and drain over a sieve. Transfer the drained chickpeas to the bowl of a food processor; add the eggs, baking powder, chopped onions, salt, spices, and process till mixture is pasty; add the parsley, cilantro, mashed garlic and olive oil and process till mixture is smooth and all the ingredients are well combined; transfer to a loaf pan lined with parchment paper. In a bowl, pour the tahini and stirring constantly pour the lemon juice then the water and add the mashed garlic if using; if not using garlic, taste and add salt if desired; one can also add some minced herbs to the tarator.

This recipe takes the basic miso soup, which in our house comes in a one serving pouch and makes it more gourmet, homey, soul food. It is rich, healthy and does wonders when you starting to feel under the weather. Which means that it is perfect for the approaching fall, school and germs. You can make this vegetable soup two ways.

Butternut Squash Ravioli with Sage Browned Butter | Fall Entertaining

Well, that was before I had had it mixed with parmesan cheese, stuffed in ravioli and smothered in sage browned butter. This weekend, Mike and I stayed in on Saturday night and created a Ravioli Duo... homemade ravioli two ways. Actually, I wanted ravioli stuffed with Chicken, Spinach and Mozzarella in a Tomato Cream, and Mike wanted Butternut Squash stuffed ravioli in a Sage Browned Butter. And given my (former) evasion to butternut squash, I really didn't want it for dinner, but thought it would make a good blog post for those of you that do. Turns out...
This is by far my favorite soup, ever. Well at least at this point in my life. I usually call it Moroccan Lentil soup but since I already posted a Lentil Soup on here I did not want to confuse anyone. I can live on this soup for days and it may be my last meal if my stomach can handle the spice in my golden years. It is also super healthy (I hope at least) loaded with protein and spicy, but with just the right layer of spices. I have given out recipe for this soup to at least dozen people so I don’t think it is me, It’s them.

The lentil stuffing can be made up to 3 days in advance and stored covered in the refrigerator. The mushrooms can be stuffed and assembled on a baking sheet the day before. Bake and finish the stuffed-mushrooms right before serving.

The other day, I was looking at the overload of tomatoes that I bought as the season was winding down as the end of summer nears. But I realized that I was being gradually shoved out of my small kitchen by them, so I oven-roasted the louts with garlic and herbs to reclaim a few precious inches back of kitchen counter space. Yet when they were finished, I looked in my refrigerator, and there wasn’t any room in there either.
Mothers Day is right around the corner and it is the perfect time to show mom that you care by making her a home cooked meal or better yet, by cooking for her all day. Let mom sleep in in the morning and when she gets up, serve her breakfast or brunch in bed and then later on in the day impress her with a tasty dinner and a decadent dessert.
