I went to see tUnE-yArDs on Monday night with some friends, and as always we wanted to cook a meal that somehow related to the show we were heading to. Sometimes this is hard to do , but other times it seems to come naturally . Finding culinary inspiration in Merrill's lyrics seemed like it would be tough, but my sister knew what she wanted to make without hesitation. "How about something layered, because of all the vocal and instrument layering in the music?"
A creamy macaroni and cheese recipe that will satisfy both young and old made with Kerrygold cheese and butter from grass-fed cows. This mac and cheese reheats beautifully the next day with just a bit of milk or cream stirred in. Ole pointed out a few weeks ago that our children were growing up with a different food experience than either one of us had. Things like peanut butter and jelly sandwiches, mac and cheese lunches and daily desserts are not the norm over here. Rather than growing up on lunches made from blue boxes and smeared on sandwich bread, our kids are generally dining on leftover fried rice , sandwiches made from leftover meat and a variety of soups and pastas , which do, in fact, include macaroni and cheese every so often. So, when our Costco recently started stocking their shelves with Kerrygold products, I felt inclined to share one of my favorite macaroni and cheese recipes with you.
Portobello Mushroom and Baby Spinach in Vanilla Fig Balsamic Vinegar This recipe is dedicated to my brother, a strong advocate for cooking without oil. Ingredients 3 medium sized portobello mushrooms sliced
Happy Thursday Morning Foodies! It’s another gloomy day here in NoVa, which is okay with me. I have really been enjoying the rainy days here. However, rainy days in other parts of the country are not as easy going as my rainy days.
This recipe takes the basic miso soup, which in our house comes in a one serving pouch and makes it more gourmet, homey, soul food. It is rich, healthy and does wonders when you starting to feel under the weather. Which means that it is perfect for the approaching fall, school and germs. You can make this vegetable soup two ways.
Umm, so if you’re watching your weight, you may want to click back to the last page you viewed right about now…. I tend to cook healthy dishes most of the time, but decided to go all in on this one and it was so worth it! I was in the mood for some comfort food this week, and my cute little French Onion Soup bowls were begging to be used again , so I dreamed up this French Onion Mac & Cheese!
3K+ You might remember a few short days ago when I said that I really don't get excited aout butternut squash. Well, that was before I had had it mixed with parmesan cheese, stuffed in ravioli and smothered in sage browned butter. This weekend, Mike and I stayed in on Saturday night and created a Ravioli Duo... homemade ravioli two ways. Actually, I wanted ravioli stuffed with Chicken, Spinach and Mozzarella in a Tomato Cream, and Mike wanted Butternut Squash stuffed ravioli in a Sage Browned Butter. And given my (former) evasion to butternut squash, I really didn't want it for dinner, but thought it would make a good blog post for those of you that do. 3K+ Turns out... I do like butternut squash.
This is by far my favorite soup, ever. Well at least at this point in my life. I usually call it Moroccan Lentil soup but since I already posted a Lentil Soup on here I did not want to confuse anyone. I can live on this soup for days and it may be my last meal if my stomach can handle the spice in my golden years. It is also super healthy (I hope at least) loaded with protein and spicy, but with just the right layer of spices. I have given out recipe for this soup to at least dozen people so I don’t think it is me, It’s them.
Ingredients (use vegan versions): * 4 cans dark red kidney beans * 1 yellow onion or 1/2 white large onion, chopped finely * 1 pkg. taco seasoning * Quick cook rice for 4 * 2 teaspoon olive oil or bean liquid Directions:
Tofu and vegetables are cooked in the aromatic Asian sesame oil and creamy peanut butter. This is a spicy, crunchy, healthy stir fry done in a few minutes time. This is something which I had made quite sometime back for a quick lunch. All my half written posts from the draft need to be posted, there are too many of them. I had some half a block of Tofu left after we had Tandoori Tofu the night before for dinner.
Rating: 0.0/ 5 (0 votes cast) Here’s a simple and tasty late summer dish. Tomatoes and navy beans are a companionable pair, especially if you use the optional vegan sausage to bridge their flavors. Serve with a simple potato dish and a big colorful salad.
The other day, I was looking at the overload of tomatoes that I bought as the season was winding down as the end of summer nears. But I realized that I was being gradually shoved out of my small kitchen by them, so I oven-roasted the louts with garlic and herbs to reclaim a few precious inches back of kitchen counter space. Yet when they were finished, I looked in my refrigerator, and there wasn’t any room in there either.
Baked Cavatappi with Chicken in a Pesto Cream Sauce E meril’s new cookbook Sizzling Skillets and Other One-Pot Wonders is proving to be a really great cookbook. I am so proud to be part of the One-Pot Cooking Party.
You didn’t think I’d show you how to make those delicious Jalapeno Pepper Jack Scones and not show you how to rock them out with some chili, did you!? Yea… you’ve got some cooking to do. I’ll leave you to it… besides, I’m totally busy shopping for cheek stain online. I manage to throw, darn near, the entire contents of my fridge in my chili. Beer, barbecue sauce, every vegetable trying to half rot in my crisper, loads of beans and spices by the handful.
I’m totally ready for fall. I’m ready for super comforting meals that I get to eat while sitting at home, in my sweat pants, with my slippers on! And I’m ready for Thanksgiving. Too soon perhaps? Considering the fact that it’s still about 80 degrees here in LA, I guess this Potato Romanoff dish will have to do Twice Baked Potatoes have always been a favorite of mine, so when I saw this recipe for Potatoes Romanoff (something I had never tried before) I knew I had to make it immediately!
