Untitled. Untitled. Lazy Chicken and Potatoes. I used to be a meal planner… I would sit down over the weekend and plan out meals for the coming week, complete with shopping list and “do ahead” notes so that I would remember to prepare some meals ahead of time on busy days. Lately, I’m lucky if I know what I’m making for dinner before 5:00pm. I usually end up throwing something together at the last minute, hoping that it will turn out to be edible, and if I’m lucky, worthy of being posed on my blog. This week has been busier than most. I’m still amazed that I had the foresight to throw this dinner in the slow cooker on Tuesday morning.

Come Tuesday evening, though, my hubby and I were both glad that I had taken a few minutes in the morning to whip up a quick dinner. Let me tell you – it was not the first time that my slow cooker saved me from a sub-par fast food dinner because I was too busy to cook. It’s no secret that I love anything cheesy. Mr. HH even picked me up with a cheesy line when we were teens. ‘Drop the zero & go with the hero’. See, I’m a lost cause. Um. This is one of those recipes that I made up on a pantry challenge - I found a whole block of asiago cheese in my refrigerator. Pretty much your whole meal is in this dish. First thing, you need to roast your garlic. Now, get your diced potatoes in the oven. Meanwhile, start on your chicken. Set the chicken aside. Now, it’s time to make the best part of all. The result is a creamy, thick chicken stew that is just perfect for chilly nights!

Try it and be converted to a dumplin’ lover forever. Another reason I love this dish so much? To make the dumplings, in a large bowl measure out 2 cups of flour … A half teaspoon of baking powder … And some butter! Then add a little less than a cup of milk and a pinch of salt. Mix the dough together and then roll out on a heavily floured surface. Then make criss-crosses so you have lots of cute little dumpling squares.
