I wanted to come home with armfuls of "baked potato popcorn" and "chocolate kettle corn" but every bag carried a "may contain" warning. If you don't have food allergies or intolerances you might not notice the small "may contain tree nuts" or "may contain wheat" disclaimers on foods that don't list an allergen as an ingredient but may contain an allergen thanks to cross-contact that occurs during manufacturing.
While the popcorn that enticed me didn't technically contain any of my allergens, it was off-limits thanks to the "may contain" warning*. I left the shop empty-handed but with a serious urge for some popcorn. Enter Chocolate Chipotle Bacon Popcorn. Made with allergen-free dark chocolate, this popcorn hits all of my favorite snack buttons: it's salty, chocolatey, and spicy. The first few batches I made without bacon. These little bacon and goat cheese pops were inspired by these very popular cake pops, Elizabeth's wonderful bacon-wrapped potato bites, and these goat cheese balls from Neiman-Marcus. These are not for the dieting or those of a non-bacon-loving persuasion.
Try serving these at your next spring soirée; they're pretty enough for a nice party, but they have that magic ingredient even the most fussy eater will love: BACON! Goat Cheese Balls with Herbs, Pecans, & Baconmakes 16-20 6 slices bacon4 ounces goat cheese4 ounces cream cheese (not whipped)2 tablespoons chopped thyme or basil, dividedCracked black pepper1/4 cup pecansApple slices, to serve Cut each piece of bacon in half. While the bacon is cooking, whiz the goat cheese, cream cheese, 1 tablespoon of herbs, and a few turns of cracked black pepper in the food processor.
Clean out the food processor. Sweet Potato Gnocchi with Gouda Cheese Sauce. This morning I was looking at my home page and I realized that there is a lot of orange sweet potato and pumpkin going on. Considering the time of year I think it is very fitting. Maybe I should go red and green when Christmas comes around? Got any green and red recipes that I can try out for Christmas? In keeping with the autumn orange theme I got the idea to try a sweet potato gnocchi covered in gouda cheese sauce.
The idea was to do it in a stovetop mac and cheese kind of style. I have never made a potato gnocchi before. First and most important you need 1 pound of sweet potato. In the photos I as preparing a double recipe so that is why you see so many potatoes. Pierce the potatoes with a fork. Microwave the potato for 5-6 minutes on each side, until tender. Slice the potatoes in half and let cool. Scoop out the flesh of the potatoes and mash, you need 1 1/2 cups of mashed potato. Add Parmesan cheese, brown sugar, 1 teaspoons salt, and nutmeg; mash to blend. You have made a roux! Gnocchi.
