Soft White Bread

I've posted a couple of bread recipes lately - one post was entitled "Gooder than Sushi" Bread and the other was a simple French bread recipe, or Pain Ordinaire. Both are made from rather lean doughs, with little or no fats included in the ingredients. This tends to produce a chewy bread that is best eaten the same day it's baked. The "gooder than sushi" description came from my 6-year-old son, who absolutely LOVES sushi, but (that day) liked the bread even more. I got an email about the "Gooder than Sushi" bread from Susan, who had made a batch of the bread but wasn't as impressed by it as Alex was. So here it is. Ready?

I love it when that happens! I mentioned on Facebook the other day that I had a piece of frozen mahi defrosting in my fridge..and didn’t know what to do with it. The suggestions came pouring in. So why not turn fish tacos into an actual taco-less salad instead, right? This is my favorite kind of evening meal…how can you not feel great after eating this. Serve this over mixed greens or tostadas as a main dish or you can put this in martini glasses as a fancy appetizer. This is perfect to bring to a potluck, or you can halve the recipe for less servings. Fresh crab is always best but if that's not available near you, canned lump crab would do. For the corn, you can roast the corn on the grill, or if you are lucky enough to live near a Trader Joe's, they sell roasted frozen corn which is such a convenience. A good tip, if you make grilled corn on the cob often and have leftovers, cut it off the cob and freeze it! In a small bowl combine red onion, lime juice, olive oil, pinch of salt and pepper. In a large bowl combine chopped crab meat, avocado, tomatoes, hot pepper and corn. Honey Citrus Salmon. Many people spend Valentine's Day at their favorite restaurant with their loved one.

I can't say I wouldn't love that myself- a night off from the kitchen with no distractions away from my husband sounds amazing. However, depending on the restaurant, sometimes the crowded and noisy atmosphere can alter the intimate mood you were hoping for. Which brings me to why a meal at home may be your best choice. However, the biggest stumbling block to a successful Valentine's Day dinner at home is finding the right dish.
