Spinach Pesto Grilled Cheese Sandwich. Earlier on in the week, when I made the spinach, or spanakopita pesto pasta I made sure to keep some of the pesto left over for something new. I had come across the idea of using a pesto in a grilled cheese sandwich and it was the perfect time to try one. I have been experimenting with grilled cheese sandwiches for a while now.

It all started when I first tried adding some jam to one then I moved on to chutneys and now it was time to try a pesto grilled cheese sandwich. It’s basically a glorified Grilled Cheese made with rye bread, sliced red onion, bright red tomato, whole green chilies and two kinds of cheese. The bread is slathered in butter before grilling to ensure maximum taste and maximum calories, which I’m like, totally all about. Like, totally. For years and years I tried unsuccessfully to duplicate it at home, but never could get it quite right. Only recently, when my Punk-Ass Sister, Betsy, was visiting, did I finally learn what I’d been missing all these years.

We were wrong. The sweet juicy nectarine, lightly caramelized, and salty prosciutto are a fantastic contrast, and the woodsy rosemary studding the buttery, crispy focaccia is a great complement to the fruit. Bánh mì Vietnamese Sandwich. I was recently sent this wonderful cookbook, "The Encyclopedia of Sandwiches" by Susan Russo. When I was told to expect it in the mail, I was excited at the concept- a book dedicated to delicious sandwiches! I could use a book like this. Too often my sandwiches are plain and routine so looking through a book with beautiful pictures, courtesy of Matt Armendariz, and delicious recipes, helps motivate me to kick up my lunches once and for all! When I received the cookbook my first impression was a great one. With a bright and vibrant cover photo of a sandwich I'd never seen before, I was intrigued and curious to see what was inside.

Once I flipped through the pages I could tell this book covered a wide range of recipes. Susan includes recipes from traditional and classic to unique and adventurous sandwiches. After flipping through all of the recipes, I decided to try the Bánh mì Vietnamese Sandwich first. This sandwich was everything I had hoped for...fresh and flavorful! Serve and enjoy! I can’t figure out why saying ‘yes’ is easier than saying ‘no’. Actually I have figured that out. There are a lot of things I CAN figure out… namely: Shrimp and Grits and Potato Chip Sandwiches. And while I still may stumble on the grammatical difference between laying and lying… I know that at least… at the very least, I can make an AMAZING (seriously…) spicy grilled cheese sandwich. I feel like I don’t need to tell you how to make a grilled cheese sandwich. Peppers are peeled. Creamy. Prosciutto, Pear, and Goat Cheese Panini. We ate lunch at a local coffee and sandwich shop a few weeks back, and ordered one of their paninis.

It was filled with goat cheese (my favorite), and slices of fresh pear and prosciutto. Delicious. And we thought, hey, we have a panini maker we haven’t used in maybe 8 months, why not dig it out and try our hand at making these ourselves? So we did. And it was good. We had some gorgonzola cheese leftover in the fridge as well, so we ended up making one sandwich with goat cheese and another with gorgonzola.

The never-ending quest for the perfect grilled cheese continues in this post. Given that it is National Grilled Cheese month, it only makes sense for me to post a damn fine sandwich. There is a small market on the ground floor of my office building. Recently, I’ve been opting recently for the only vegetarian sandwich on the menu which also happens to be delicious. There are 48 sandwiches on the menu. Directions 1) Prepare all of your ingredients. 2) Add a few tablespoons of vegetable or olive oil to a griddle or pan and add your onions, shrooms and peppers. 3) Split them into to even piles and put your cheese on top of them. 4) Slice pita in half and add it to your griddle cut-side down to it can toast lightly. 6) Top with sprouts and slice and serve.

Why anyone would eat these surgical offcuts when sober, I will never understand. I’m usually a baker of bacon; rather than a fryer.
