But only if it has FLAVOR. Have you ever had guacamole that tastes like… paste? EW. My sister makes damn fine guacamole. This is her recipe. First, you start with your avocado. Scoop out the yummy green stuff and place into a bowl. (Ignore the olive oil in the corner, I was making other stuff at the same time!) Then add some chopped tomatoes. Cumin is next- again, the amount is up to you, really. Then add some chopped jalapeno (optional, and the amount just depends on how hot you like it!) There you have it: guacamole. Sure, we ate tacos occasionally but that’s about it. And just in case you were wondering, Taco Bell DOES NOT count as Mexican food. Over the past couple of years, I have actually tried making my own Mexican inspired dishes and they have turned out pretty good. This past week I even tried to make my own salsa. The verdict? The key to a good salsa? Gorgeous, fresh ingredients.

Pepe the King Prawn’s Salsa Ingredients 2 medium tomatoes, seeded and diced 1 medium green bell pepper, seeded, stemmed, and diced ½ medium onion, diced ½ tablespoon jalapeno peppers, seeded and diced 2 garlic cloves, chopped Juice of 1 lime ½ cup cilantro, chopped Salt and pepper, to taste A few dashes of hot sauce (optional) Instructions Put all ingredients in a food processor fitted with a blade.
