Aioli - Mediterranean Garlic Sauce

Aioli [aye-awe-lee] is one of the most popular sauces in the Mediterreanean - an emulsion of olive olive oil flavored with lemon juice and as much garlic as you can take. It is insanely addictive and is very efficient in warding off vampires. Skin the garlic and place it in the mortar. Grind your garlic cloves down to a paste with a little salt. Quantities? Here I'm using a stone mortar my dad found in a 16th century house with its boxwood pestle. Add 1 egg yolk (or the whole egg)... ... and grind... ...until you get a smooth paste. Now for the delicate part. Start pouring a small stream of oil into the eggs and whisk. You'll get better result with a proper whisk rather than using the pestle. The past month or so has been extremely busy and a bit stressful for me.

Not really bad stress, just lots going on. When I get stressed, I eat. And when I’m really busy, I stop exercising. So naturally, these past few weeks, I’ve noticed a bit of a backslide in my weight loss. Nothing major- just a couple of pounds- but I am trying to be really careful not to let things get too out of hand. So this week, I’m back to watching what I stuff in my face.

I always do better when I start my day out with a good breakfast. Start with some diced onions and peppers (usually I leave these out unless it’s a day when I’m not in a hurry… which is pretty much just the weekend day I took these pictures. heh) Put them in a skillet sprayed with some cooking spray. You can use real eggs if you prefer, but those are a lot more points/calories. 1/2 cup of egg substitute is only 2 WW points! Add the eggs to the skillet. My brains…. also pretty scrambled right now. As far as I see it, there are two solutions to the scrambled brain mess that I’ve got going on inside my head right now: a whole weekend worth of sleep or a bag of fun size Snickers bars. Aaaand Snickers it is… but first, let me show you what I eat morning, noon and night: scrambled eggs. Are you picky about how you cook your eggs?

Maybe a little? Start with good quality eggs. Break three eggs into a bowl. Beat eggs lightly with a fork. Melt just over a tablespoon of butter in a pan over low heat. It may take 3 to 4 minutes for the eggs to become just set but still creamy. When eggs are scrambled to your liking, remove from the pan, top with a touch more salt and fresh ground pepper, and serve with buttered toast.
