Trail Mix Cookies. Okay, okay, enough with the chocolate. I know, it’s been a little indulgent over here, and so I’ve decided to go with a “healthier” option this week. These are a spin off my first post, Oatmeal Craisin Cookies, a delicious classic. Here they’ve been infused with trail mix — a mixture of craisins, chocolate chips, and chopped whole almonds. With whole wheat flour and oats, it’s as healthy of a cookie you’ll find on this blog! I make my own “trail mix” for lunch, it’s cheaper and I can throw in whatever I like. These cookies have a good crunch with a chewy interior, are full of flavor, and make you feel wholesome as you eat them. Trail Mix Cookies 1/2 cup butter, at room temperature 1/4 cup sugar 1/2 cup brown sugar 1 egg 3/4 tsp vanilla extract 1 cup whole wheat flour 1/2 tsp baking soda 1 tsp baking powder 1/2 tsp salt 1/4 tsp cinnamon 3/4 cup oats 3/4 cup mixture of chopped almonds, craisins, and semisweet chocolate chips Recipe yields about 12 cookies.

I have a lot of reasons to be thankful for my roommate Colleen — she makes sure I’m up those mornings that I sleep past my alarm, she keeps me sane during crunch times such as right now (ahhhh!) , and most importantly, she helps me eat the things I bake so I’m not a total cow. I always leave Colleen a few cookies, scraps of cake, or half eaten muffins so she can also enjoy the goodies I’ve been making for other people (I’m hoping it makes up for the mess I leave in the kitchen sometimes…) But for her birthday she wasn’t going to get leftovers, I told her I’d make whatever she wanted. And this is what she chose: Well all she requested was red velvet cake with cream cheese frosting but of course I went overboard with the fondant decorations.

We got out early from PBL, what can I say. It was also our friend Pamela’s birthday, and although I didn’t follow any requests from her, she was equally happy with her plate of festive cupcakes. I am a huge fan of citrus, I bring a grapefruit every day for lunch, and although I’ve taken out a few eyes with the juice, that tangy fruit is always worth the labor to me. So when my brother’s school was selling Florida oranges and grapefruits as a fundraiser, I was all over it.

I received 2 big crates, and was so amazed at just how orange the oranges were! I’m not sure of the specific variety, but when I squeezed a few for fresh orange juice, it was so delicious, sweet, and pretty in color — I knew I had to bake with it. So instead of the traditional lemon bars, today I bring you orange bars. I think it’s the perfect dessert for this weird limbo time between winter and the supposed warm weather that’s coming (helllooooo, we’re waitinggg…) — citrus is best enjoyed during the winter months, but the taste and look of this dessert just makes me think of sunshine. I won’t bore you with a lot of words today because it’s getting late and I haven’t made dinner, started laundry or painted my nails. I have, however, checked Pinterest 3,457 times, gone to hell (Pilates class) and made a fun cocktail for my other site. ANNND I still have to pack for a trip that I am going on tomorrow with some of the coolest girls in all the land, like her and her and her aaannd her. Salty Caramel Oat Bars. OK, here’s what you do… Mix up the usual suspects in your stand mixer…butter, sugar, eggs, vanilla… Mix in some newbies, crushed pretzels, oats and, of course, flour… Press that yumminess into a jelly roll pan lined with foil.

Well, my friends forced me to take a Zumba class. FORCED. As in MADE ME DO IT. Ok, they didn’t actually force me, but they were all doing it and…yeah…I gave into peer pressure. Sorry parents. Well, Zumba is this cardio workout that is a kind of Latin-dance-inspired. The class started off bad and ended worse. The instructor had hip-action to spare, but was unwilling to loan any to me. When the music started I can say with no uncertainty that the astute words of Gloria Estefan could have never been more wrong.

The women that surrounded me were essentially the Nancy Grace to my Kate Gosselin, but in the moment I felt like their booty shaking rivaled Beyonce. Every once in a while I would get a move down and feel proud…until I watched myself in the god-forsaken mirror. I left the class feeling humiliated and sweaty, a combination that I don’t recommend. Remember last year when I made Santa Hat Brownie Bites with strawberries? Well I came up with a new way to jazz up some strawberries for the holidays this year. This version takes a little more work with piping all over the strawberries, but certainly not much skill so I highly suggest you give them a try even if you’re nervous about piping.

I think it would be really cute to do a platter of Santa hats and Christmas trees mixed in together — less work piping a whole plate of trees too! There’s no specific recipe with this, but here’s what you need to make them like I did: Your favorite brownie recipe, halved (This one’s my favorite)Batch of pipeable frosting (I used cream cheese frosting because it’s delicious)24 small-medium strawberriesYellow fondant or star-shaped sprinklesSmall ball shaped candy decorationsDisco dust (if you have it) Cherry Clafoutis. The other day I asked what you would do with a bucket full of cherries and some of you suggested clafoutis, which is a simple and brilliant French dessert. Clafoutis starts with a baking dish of cherries covered in a thin egg batter. When baked, this batter turns velvety and flan-like. Originating from the Limousin region of France, the dish was developed to showcase the beautiful cherries from this area.

Some recipes will instruct you to bake the clafoutis with whole cherries as the pits are said to add depth of flavor to the batter. However pitted cherries make this easier to scarf, which you will want to do once the sweet smell of baking clafoutis fills your kitchen! - 2 cups of pitted sweet cherries* - 1 cup and 2 tbsps of whole milk - 2 tbsps and 1 tsp of unsalted butter - 3 extra-large eggs - 1/4 cup and 2 tsps of granulated sugar - 1/2 tsp of kosher salt - 3/4 cup of all-purpose flour, sifted - a heaping spoonful of powdered sugar Pre-heat an oven to 375 degrees.
