Serve them with my quick marinara sauce and you have yourself an appetizer everyone will love. Hot mozzarella sticks, I can't think of a more popular finger food with both kids and adults alike! I mean, what's not to like? Baking them as opposed to frying and using part skim cheese doesn't effect how good these are. The cheese still melts, see for yourself! Of course, you'll want to serve them hot right out of the oven, because like any cheese, as they cool they harden.

You’re skeptical, aren’t you? I understand. (I ♥ cheese too.) When it comes to vegan cooking and baking, cheese substitution is one of those things that gives me a headache. I’m a bit wary of soy-based alternatives, as they seem over-processed and unnatural in comparison. Honestly, if you’re too lazy to make ravioli, just make this filling and eat it like mashed potatoes. A while ago, I posted another recipe for artichoke dip, but let me tell you – this one blows that one out of the water. This one is thicker and richer, thanks to the cream cheese, and it also has a zing of flavor from the seasonings I added.

This one is also grain-free (the other one used flour as a thickener). Plus, it has yummy spinach swirled throughout it. Score! Spinach artichoke dip has always been one of my favorite appetizers to order in restaurants, but I basically never order it anymore because it’s always served with chips/bread/crackers. Another great thing about this dip is that it can be made very quickly by microwaving the ingredients sort-of-separately, mixing, then broiling in the oven. You will need: 8 oz. Mix all ingredients in a baking dish, and sprinkle on a bit more mozzarella, then broil until the cheese is browned.

When I told my friends I was planning on making homemade mozzarella sticks for a guy’s weekend out of town the idea was met with a profound lack of enthusiasm.

Everybody knows that I like to experiment in the kitchen, but somehow the idea of making a bar food staple like mozzarella sticks from scratch seemed like a complete waste of time to the group. After being lectured about the innumerable brands available in the freezer section at the grocery store and a heated debate about whether marinara or ranch is the better dipping accompaniment, I decided to risk further heckling and see if I couldn’t one-up T.G.I. Friday’s in my own kitchen. It might have been the alcohol, but the first batch was gone within a matter of seconds. Simultaneously crispy and gooey, these mozzarella sticks seem to defy the laws of physics and flavor. With the question about whether or not it’s a waste of time to make mozzarella sticks at home answered, the question of the perfect dip remained.

There's something about the buffalo chicken and blue cheese combo that really appeals to me and I had a craving for it lately. When I came across a recipe for ham and cheese stuffed pretzel bites, I figured I could substitute it with chicken and blue cheese. That's when I decided to make these Buffalo Chicken Bites... yum! These are such an awesome snack, which could be a meal in itself if you have enough of them. It's not hard since they are addictively delicious!

I plan on making these again and experimenting with other fillings such a steak, provolone, sauteed peppers and onions for Philly Cheesesteak Bites... or even pepperoni, italian sausage, mozzarella and mushrooms for Pizza Bites.
