I have had these Twix Bars on my list of things to make ever since I started the blog. I love twix, my kids are obsessed with Twix, so why haven’t I made them until now? I don’t know but I have been missing out. Twix Bars have always been a favorite of mine. These tasted exactly like a Twix Bar. Homemade Twix Bars A delicious shortbread crust, caramel center and a chocolate layer on top.

Recipe Slightly adapted from King Authur Flour. Peanut Butter Chocolate Bites. Some days are lazy. Relaxed. There’s time for baking pies. There’s rain trickling down the windows. It’s cold outside and something freshly baked and warm is all you need. Other days are not so. You’re busy, running around, and there are errands that need to be done. So if any of that sounds like you, these chocolate peanut butter bites are going to be right up your alley. This recipe is no-bake. It makes little bites that are kind of like peanut butter cups, with a little crunch from the cereal.

The original recipe makes them in bars, but I had just bought a new mini muffin pan, and thought it would be cute to make them little bites! And depending on what cereal you purchase, these can be made gluten free too! 110g unsalted butter, melted (1/2 cup) 140g peanut butter (1/2 cup, 5 oz) ½ cup crushed rice bubbles or cornflakes ½ cup rolled oats, finely ground in the food processor 1 cup icing sugar (powdered sugar) ⅔ cup chocolate chips 2 tbsp peanut butter Adapted from Peas and Thank You. Healthy Apricot and Coconut Balls.

There’s this stuff at the supermarkets here called Apricot Delight. It’s like these little squares of apricot and coconut, well, delight. They’re coated in coconut and I secretly really like them. Secretly because they’re processed, full of sugar and are not good for me at all. But there’s just something about them that seems perfect for a snack. So when I saw a recipe for them recently (and then read the ingredients list, which had only three things on it!) I made them as soon as I could. They’re really easy to make. They make me feel much better about snacking than the store-bought version does, and they’re much better for me too. I’ve been sharing lots of super easy, three-ingredient recipes lately. In the meantime, enjoy these little snacks! P.S. 1½ cups dried apricot 1½ cups shredded coconut 1 tbsp honey Process together the apricots, ½ cup coconut and honey.
