RAW Chewy Freezer Fudge. I know that health nuts everywhere tout the benefits a Raw food diet, but I have to admit that I love food far too much to only eat raw. Now, since I have no idea why anyone would eat Raw, I did a little research and found a quick list of benefits to why one would want to eat Raw. They include a fiber rich diet, clearer skin, increased energy, lower saturated fats in raw food, and increased nutritional value in raw foods. Healthy benefits aside, there simply is no substitute for a delicious piece of cake or a cookie that is warm, right out of the oven. That said, I did stumble upon a recipe for Raw Freezer Fudge that sounded pretty good and I decided to give it a try. The recipe has no refined sugar and the base is made of almond butter. In the event you don't have any almond butter, like I didn't, I just made my own. Super easy....just take 4 cups of almonds and grind them up in your food processor.

One caveat to this recipe is that it is fattening! Quick fix: Jam Straws. Tartelette. My grandmother used to say "Sundays are good for apple tart". I have to agree, and add that any day is good for apple tart. But also, days begging for a warm embrace, a soft kiss and a little balm to the soul are greatly improved with a slice of my grandmother's apple tart. Especially when shared with friends. I believe our friends have heard my stories about my grandparents and family a million times over. That's part being proud to be of their flesh and blood, part being away and nostalgic, part keeping connected across the miles with some basic traditions.

This past week has been trying for my family back home, leaving me with the need to get in the kitchen and cook and bake comforting family recipes. I often think of the recipes I was given by family members as the backbone for what I am doing today. It can be a tough navigating act to keep balanced, energized and creative during the holiday seasons while navigating the million gazillion things we all have to do. FridaySep 11, 2009 making oatmeal more fun with banana, strawberry, and brûlée I know they say oatmeal is good for you, but if you’re like me, you’re adding a little something to make that colorless mush just a wee bit more appetizing. A drizzle of honey and some dried fruit like cherries or blueberries goes a long way, but why stop there when you can take it a step beyond?

I like to elevate my oatmeal to dessert status. All it takes is a few slices of banana, and in this case some sliced strawberries as well, a spoonful of white sugar (I use organic sugar made from evaporated cane juice, don’t use brown sugar here as it will burn into black clumps) sprinkled over the fruit, and a propane torch for some heat. One thing I’ve learned is to pass up the expensive mini torches you find in gourmet specialty shops and head to your local home center to pick up an industrial torch. Pass the flame of the torch slowly over the sugared fruit, keeping the tip of the burner about 3-4 inches away.

We love our whipped cream in coffee, on berries for dessert, really on any of our primal desserts. But it’s nice to have an alternative to dairy and for our Paleo friends. Henry thought it would be good to have some cold coconut milk and stuck a can into the fridge for a couple of hours. When he opened it he noticed that it had gotten very thick on top, so he scooped it out and noticed that it had separated from the coconut water.

So he added a little cinnamon and a little organic vanilla extract to the thick coconut and whipped it up. To our happy surprise it got thick and creamy immediately, and Oh Wow!!! So since then we’ve been enjoying our morning cup of coffee with a spoon full. So here are a couple of pictures for you – try it, it is so incredibly easy and completely gluten and dairy-free.
