Now, since I have no idea why anyone would eat Raw, I did a little research and found a quick list of benefits to why one would want to eat Raw. They include a fiber rich diet, clearer skin, increased energy, lower saturated fats in raw food, and increased nutritional value in raw foods. Healthy benefits aside, there simply is no substitute for a delicious piece of cake or a cookie that is warm, right out of the oven. That said, I did stumble upon a recipe for Raw Freezer Fudge that sounded pretty good and I decided to give it a try. The recipe has no refined sugar and the base is made of almond butter. One caveat to this recipe is that it is fattening! I haven't made these in ages and forgot how good they are. Here's the recipe so you can make them, too! A drizzle of honey and some dried fruit like cherries or blueberries goes a long way, but why stop there when you can take it a step beyond? I like to elevate my oatmeal to dessert status. All it takes is a few slices of banana, and in this case some sliced strawberries as well, a spoonful of white sugar (I use organic sugar made from evaporated cane juice, don’t use brown sugar here as it will burn into black clumps) sprinkled over the fruit, and a propane torch for some heat. One thing I’ve learned is to pass up the expensive mini torches you find in gourmet specialty shops and head to your local home center to pick up an industrial torch. But it’s nice to have an alternative to dairy and for our Paleo friends. Henry thought it would be good to have some cold coconut milk and stuck a can into the fridge for a couple of hours. When he opened it he noticed that it had gotten very thick on top, so he scooped it out and noticed that it had separated from the coconut water. So he added a little cinnamon and a little organic vanilla extract to the thick coconut and whipped it up. To our happy surprise it got thick and creamy immediately, and Oh Wow!!!

So since then we’ve been enjoying our morning cup of coffee with a spoon full. Sour cream coffee cake. TGIF, friends.
