It’s DAY 1 of the 12 Days of Christmas Cookies over here at The Girl Who Ate Everything. These cookies caught my eye because not only are they different from any other cookie I’ve ever made, they’re green and red…perfect for a Christmas cookie plate. These are easy enough that you could easily whip up a 7-8 dozen for a cookie exchange.

He’s not afraid to tell me when something I make is awful (it has happened before… believe me!), so I know he’ll give me an honest opinion. So, when I’m baking and working on a new recipe, I often take him a plate of samples. I’m siiiiick. If you follow Willow Bird Baking on Facebook or Twitter (you do, right?), you’ve probably heard me whining about it lately (okay, maybe this isn’t the best way to encourage you to follow). Let me create a little scenario for you... you are invited to a cookie exchange at the last minute and don't know what to make. OR, scenario #2 (more likely), your kid comes to you and says he/she needs to take in cookies the next day for { fill in event here } which he/she has known about for a month but is just telling you about now. I give unto you a cookie recipe that you should probably file away somewhere for just such an occasion.Ever have one of those "Ah-ha!" moments? I happened to me yesterday when I was lamenting the price of those very convenient Betty Crocker Cookie Mixes. I remember when they used to only cost $1.00 each in Walmart and now they're $2.50 each! Who says there's no inflation? Anyway , I usually just tell myself that I can make cookies from scratch anytime with the plentiful ingredients of my pantry , but then it came to me...Why can't I make cookie pre-mixes and keep them in ziplock bags for use at my convenience?
