WHILE walking through “America’s Kitchens,” an exhibition of seven period kitchens reassembled at the Long Island Museum here, 7-year-old Campbell DeMaio quickly grasped the concept of social change. “It was really hard living back then,” she said. Sue Wahlert, a museum educator leading Campbell’s art-class tour, tried to expand the point. She asked the children how the kitchen of colonial times that they were looking at differed from their kitchens at home, hoping they would notice the lack of a stove or refrigerator. Campbell studied a transparent plastic representation of a cook in the display. Actually, if there’s one thing this traveling exhibition proves, it is that women have long been a very visible presence in this part of the house. “It seemed like an obvious way to gain a deeper understanding of how houses work and how women’s lives have changed over time,” she said.
