“Our son, Jackson, is the sixth generation to live on the farm, which was built in 1750,” Danielle, who manages the front of house, says. “When my father was 13, he’d ride his bike down to the cove and go lobstering.” Her father, Ted Johnson, is now 70 and still goes out on his red lobster boat (which he built from scratch by hand and named Jessie Danielle, for his two daughters) a couple of days a week—and Justin, as the executive chef for the restaurant, uses everything he catches in the kitchen. “He could bring in 80 pounds or 280 pounds, but we’ll take it. Like anything else, lobster is just better when it’s fresh caught,” Justin says. “It’s brinier; it tastes like the sea.” “There’s nothing wrong with boiled lobster—Danielle’s dad makes the best,” Justin says.

It’s easy to forget that the yearly trips Michael, Orvis, and I take to Vermont every August started as little more than a late summer work trip in 2012. At the time, we had lived in New England for four years and still hadn’t been to Vermont. Since that first wonderful trip to the Green Mountain State, we’ve been back a number of times, at various points throughout the year, and continue to fall even more in love with the state, but it sure is hard to beat our summer visits to Vermont.
This August’s destination was Woodstock, a town that will always hold a very special place in our hearts, as it is where we traveled right after we were married last fall. The Woodstock Inn, we’re thrilled to report, is still as dog-friendly and inviting as it was back in November, and the town is just as charming, if not more so, in the summer when yards and gardens are at their very best, and the streets and square are bustling with people.

Meredith and I often post about summer “blowing by” or life feeling too rushed and busy, so in an attempt to slow things down a bit, disconnect for just over a day, and take advantage of some of the precious remaining summer, we recently took a somewhat impromptu overnight trip to southern Vermont. All that’s identifiable in the carnage left behind are the eyes, antennae, swimmeretes (those feathery appendages on the underside of the body), and dismembered carcass. The only place for such a messy operation is a classic lobster shack, a sometimes rough-and-tumble operation that’s usually within sight and scent of the ocean.
I’ve dined at lobster outposts from Kittery to Eastport. Some serve only lobster, others a full menu ranging from hot dogs to blueberry pie. I favor the in-the-rough, order-at-the-counter, eat-out-on-a-picnic-table shacks. And remember that while lobster prices reflect market conditions, the farther you travel from the trappings of civilization and the deeper you get into bona fide lobstering territory, the fewer frills and the less costly the goods.
