You know it’s the weekend when you walk into our kitchen and see the small mountain of juiced lime halves on the counter. Life is too short to use the neon green stuff from a bottle so we pooled our fun money to buy an electric citrus juicer a couple of years ago. My manicure no longer weeps at the thought of juicing all those limes by hands. And we put a second dwarf lime tree in the backyard. Yes, we are definitely margarita people. Sunrise Margaritas… Opera rehearsals have been taking their toll lately, and I feel like I’ve barely seen Joel at all these past 3 weeks. However, I was lucky enough to have a couple of my rehearsals cancelled this weekend, so Joel and I made plans for a little celebration at home. Frozen Mango Margaritas. Summertime is one of my favorite times of year.
I hate the heat, but I love the carefree feeling that comes along with summer. Weekends spent working on outdoor projects, lots of grilling and cookouts with friends, visitors from back home (it helps that the past two places we’ve lived are near major tourist destinations), longer days, popsicles, etc.
Summer kind of makes me feel like a kid again, and sometimes I miss being out of school and having the entire summer to play. However, one perk of growing up is that I get to enjoy fabulous adult drinks such as this one. I love mangoes and often use them in smoothies, which means my freezer is always stocked with them. This recipe is pretty straight forward – mango, tequila, ice, lime juice – and it can be adapted to suit your personal tastes.

One of my girlfriends orders her margaritas frozen, topped with a shot of Chambord. Swirled together, the tart lime and raspberry liqueur make for a very happy hour. With the abundance of fresh (and super cheap!) We tried versions with raspberry liqueur, those were boozy but they didn’t taste very fresh and the color wasn’t very impressive. I worked the recipe based on the value that made the most sense – a 6 oz clamshell of raspberries.
