For some, it worked well, and for some, it did not. Making a cake is hard enough without the addition of carefully balancing the pH levels, and it seemed everything affected the outcome of the color, whether it was the type of flour used, the type of cocoa, fineness of the ground beets, and on and on and on. People in Europe, for some reason, had the most difficult time with it, and I have yet to hear of a reader across the Atlantic who got a red cake at the end of it. I must confess, in the midst of some of the frustrated comments, I tried making the cake again, only to come up with a slightly purple version.

They turned out so yummy! It’s kind of heavier then a normal cupcake, but that’s only because a lot of the cupcake is made up of a cookie dough center (picture below). Usually my favorite part of making the cookies is munching on the butter, sugar and vanilla part of the cookie dough right before you add the eggs. This is exactly what the frosting tastes like. Cookie Dough Stuffing Ingredients 2 sticks softened, unsalted butter3/4 cup sugar3/4 cup dark brown sugar4 tablespoons milk1 tablespoon vanilla extract2 1/2 cups flour1/4 teaspoon salt1 cup mini semisweet chocolate chips Combine the butter and sugars in a mixing bowl and cream on medium-high speed until light and fluffy, about 2 minutes.

My boyfriends brother-in-law had specifically requested them and he was coming to visit so I figured it was a perfect time to make these. I read some reviews on how to bake them to prevent the cone from getting soggy. So I made 12 Jumbo Size but cooked them in 3 different ways. I did some with the batter in the cone, some in a cupcake liner with a cone on top, and some regular cupcakes and put it in the cone when it was done baking. I don't think the method you choose really matters because the cones don't taste very good to start with, so I don't think soggy cones would taste any worse.

You won’t think I am such a genius anymore once I tell you how these are done. It really is easy and makes for such a visually appealing way to dress up cupcakes, not that cupcakes need to be dressed up as the name itself is cute and enticing! I pretty much use Paula Deen’s recipe, but with a few of my own tiny tweeks to the ingredients (see*) and then I pretty much follow the directions in Paula Deen’s recipe to make the batter and frosting, though I change it up a bit (time in the oven) when it comes to baking it.
