Cadbury fined £1 million over chocolate salmonella outbreak. By ANDY DOLAN Last updated at 21:13 16 July 2007 Cadbury was fined £1millon yesterday over a salmonella outbreak which left three people hospitalised and dozens of others ill. A court heard chocolate bars became contaminated when the Birmingham-based company changed its product testing system to save money and reduce wastage. More than one million chocolate bars had to be recalled after the outbreak was made public in June last year. The chocolate giant had waited six months before revealing there had been an outbreak of a rare strain of the bug at its factory in Marlbrook, Herefordshire, which was traced back to a leaking pipe. Last night, as a lawyer involved in the case said the fine could be a record punishment for a salmonella outbreak, one victim told how he was left so frail, medics warned he could have died. Shaun Gerratty said that eighteen months on, he was still suffering with a form of irritable bowel syndrome caused by the salmonella.

He said it was a 'serious case of negligence'. PowerPoint Presentation - Banks.pdf. Microbiology of Chocolate. Chocolate comes from the seeds of the cacao or chocolate tree, Theobroma cacao. Linnaeus ascribed the genus name meaning "food of the gods" to the Greek words, theos, (god) and broma (food) and the specific epithet from the Native American word for the plant. The chocolate tree is native to Latin America and was transplanted to West Africa in 1824 by the Portuguese. Presently, Cote d'Ivoire and Ghana produce nearly half of the world's chocolate.

The chocolate tree produces small flowers along its trunk that are pollinated by midges (a type of fly). Each pollinated flower produces a large pod containing 30 to 40 bitter seeds embedded in a sweet, sticky pulp. This sweet pulp was a staple food of the Mayans 2000 years ago. The Mayans and Aztecs also used the seeds to make a chocolate drink. Chocolate acquires its color and flavor during fermentation. The pulp contains mostly water with 10-15% sugars. Dried beans are bagged for sale to chocolate manufacturing companies.

An investigation is under way after Cadbury withdrew a million chocolate bars which may have been contaminated with a rare strain of salmonella.

The company says the recall - while the Food Standards Agency and the Health Protection Agency investigate - is precautionary and that the risk is low. But a bacteriologist says there is no safe level for salmonella in chocolate. The possible contamination has been traced to a leaking pipe at a Cadbury's plant in Herefordshire in January. Samples were sent to an independent laboratory after the leak was discovered at the Marlbrook plant, and the montevideo strain of salmonella was identified.

Government watchdog the Health Protection Agency (HPA) confirmed the strain and, a week ago, the Food Standards Agency (FSA) was alerted. On Monday, Cadbury officially informed the FSA of the possible contamination of the seven products. The 105g Dairy Milk Buttons Easter Egg and the Freddo bar were also affected.
