Those of you who follow Kate and me on Instagram know that we were out of town this week, and the day that I left, my husband walked in with a giant basket of zucchini and squash from the garden, and now that I’m back there’s a million more! So I’ve been wracking my brain for all of the ways I can eat it up and I figured if that’s what I was doing, surely others are in the same boat.
So here’s a good start- a list of our favorite zucchini and squash recipes; many of these OBB reader favorites, and most can be made with either traditional green zucchini or yellow squash. We’ll be adding to this list continually, so check back using the link I’ll add to our sidebar! Zucchini Slice. Would you believe I've never actually made Zucchini Slice before? As a kid, it was not something my Mum ever made, so it's not something that comes to mind. I think I've been missing out though, as this was one of the easiest things to make and was super tasty. Roman loves it too. I left out the cheese as hubby doesn't eat it (I swear it's his only flaw) and it was still very good. This was a good test of the Tefal Fresh Express too. Zucchini Slice makes one 20 x 30cm slice 5 eggs 150g (1 cup) self-raising flour 450g zucchini (3 medium zucchini), grated 1 large onion, finely chopped 300g bacon (about 6 rashers), chopped* 1 cup grated cheddar cheese (optional) 60g (1/4 cup) butter, melted Preheat oven to 170°C (340°F).
Put the eggs into a large mixing bowl and lightly beat with a spoon. *I have also used 300g diced leftover Christmas ham in this before. Vegetable and Noodle Slice. This is a different take on Zucchini Slice and makes a nice change from the norm. With the noodles added, it's a meal in one! Easy to make and great for kids and baby led weaning. If using long noodles, chop into short pieces. Squeeze excess liquid from grated zucchini and carrot. Place eggs, milk, oil and oyster sauce in a jug. Stand for 20 minutes to set.
