Ingredients Churros:6 quarts canola oil, for frying1 3/4 cups water2 sticks (1/2 pound) unsalted butter1 teaspoon kosher salt1 1/4 cups all-purpose flour4 large eggs1 large egg whitePlastic wrap Cinnamon-Sugar Topping:1 cup granulated sugar2 teaspoons ground cinnamon Chocolate Sauce:1 cup heavy cream1/4 cup milk2 ounces bittersweet chocolate, finely chopped3 ounces Mexican chocolate, finely chopped1/2 cup sugar1 teaspoon vanilla extract1/8 teaspoon cayenne1/2 teaspoon kosher salt.
